
Ingredients
500g hot spicy cooking chorizo smoked chorizo sausage, sliced
1 onion, chopped
2 sticks celery, chopped
1 red pepper, deseeded and sliced
2 cloves garlic, chopped
150ml dry white wine
400g can chopped tomatoes
410g can cannellini beans
Fresh parsley, to finish, if you like
Crusty bread, to serve
Method
1. Fry the chorizo in a large frying pan for 3 mins, until it releases its oil. Add the onion, celery, red pepper and garlic, and cook until softened for about 8 mins, stirring from time to time.
2. Stir in the wine, tomatoes and seasoning and simmer for 15 mins, until the sauce thickens.
3. Add the drained and rinsed beans and simmer for a further 5 mins until everything is piping hot. Sprinkle with parsley, if liked. Great served with crusty bread.
