Meals Under 500 Calories: Oven ‘Fried’ Chicken And Purple Slaw

Ingredients

dried breadcrumbs 75g
hot smoked paprika 2 tsp
ground turmeric ½ tsp
garlic salt 1 tsp
celery salt ½ tsp
dried oregano 1 tsp
plain flour 2 tbsp, well seasoned
egg 1 large, beaten
skinless chicken thigh fillets 4 large, halved and excess fat removed
oven french fries to serve
hot sauce to serve

PURPLE SLAW
red onion ½, thinly sliced
red cabbage ¼, finely shredded
carrots 2, shredded
white wine vinegar 1 tbsp
mayonnaise 2 tbsp

Oven Fried Chicken Recipe with Slaw

Method

  • To make the slaw, toss all the veg with the vinegar and lots of seasoning.
  • Toss the breadcrumbs with the paprika, turmeric, garlic salt, celery salt and oregano in a shallow bowl. Put the flour and egg in 2 separate bowls.
  • Dust the chicken in the flour, then the egg and then the spiced breadcrumbs. Put on a rack over a baking tray.
  • Heat the oven to 200C/fan 180C/gas 6. Bake the chicken for 35-40 minutes or until crisp, golden and cooked through. Toss the mayo with the slaw and serve with the chicken, oven fries and hot sauce.
