Veg And Lentil Soup Recipe

It’s getting colder outside which means soup is making a comeback. 

Every time it gets colder, soup becomes people’s choice of quick and tasty food. There’s so many different flavours you can make, so it can suit anyone really. This recipe is also suitable for vegetarians, check it out below.

Ingredients

  • 85g dried red lentils
  • 2 carrots, which are quartered lengthways then diced
  • 3 sticks of sliced celery
  • 2 small sliced leeks
  • 2 tbsp tomato purée
  • 1 tbsp fresh thyme leaves
  • 3 large chopped garlic cloves
  • 1 tbsp vegetable bouillon powder
  • 1 heaped tsp ground coriander

Example.

Method

  • Tip all the ingredients into a large pan. Pour over 1½ litres boiling water, then stir well.
  • Cover and leave to simmer for 30 mins until the vegetables and lentils are tender.
  • Serve into bowls and eat straightaway, or if you like a really thick texture, blend a third of the soup with a hand blender or in a food processor.
