Pepper Chicken

Pepper Chicken

Ingredients

  • 2 boneless and skinless chicken breasts (about 300g/10½oz), cut into thin strips
  • ¾ tsp salt
  • ½ heaped tsp ground black pepper (preferably coarsely ground)
  • 2 tbsp vegetable or sunflower oil
  • 3–4 medium red onions, thinly sliced
  • 1 tsp dried chili flakes

Method

  1. Season the chicken with half the salt and pepper on both sides may be more depending on how much you would want on it however, don’t add the flaked chili just yet.

  2. Heat a tablespoon of the oil in a frying pan, make sure it is a large frying pan, and fry the chicken strips for 5 minutes over high heat, or until lightly browned on each side. Transfer to a plate.

  3. After this return the pan to heat and add the remaining oil and fry the onions over medium heat for 10 minutes or less, or until softened.
  4. Return the chicken to the pan and add the chili flakes and heat through with the onions for 2 minutes more, mixing together until hot and cooked throughout. If wanted to, add some more seasoning to add the taste.

  5. Serve the chicken however you would like.
