Low Calorie: Asian Pulled Chicken Salad

Here’s a quick and healthy recipe for all you healthy people out there. 

Despite this recipe not taking much prep or taking very long to make, it is very tasty, and healthier than the average meal!

Make sure you or anyone you’re serving this to isn’t allergic to peanuts or any other ingredients though!

Ingredients

  • 1 small roasted chicken
  • ½ cored and finely sliced red cabbage
  • 3 coarsley grated or finely shredded carrots
  • 5 finely sliced on the diagonal spring onions
  • 2 halved and thinly sliced red chillies
  • small bunch of roughly chopped coriander
  • 2 heaped tbsp of roasted salted peanuts  that have been roughly crushed

For the dressing

  • 3 ½ tbsp hoisin sauce
  • 1 ½ tbsp toasted sesame oil

Example.

Method

  • Combine the dressing ingredients in a small bowl and set aside.
  • Remove all the meat from the chicken, shred into large chunks and put it in a large bowl. Then add the cabbage, carrots, spring onions, chillies and half the coriander. Toss together with the dressing and pile onto a serving plate, then scatter over the remaining coriander and peanuts.
