This recipe is courtesy of BBC GoodFood.

Ingredients

  • low-calorie cooking spray
  • 1 red onion, roughly chopped
  • 250g/9oz mini Portobello mushrooms or chestnut mushrooms, roughly sliced or halved
  • 4 reduced-fat sausages, cut in half
  • 8 cherry tomatoes, halved
  • 200g tin reduced sugar and salt baked beans
  • 2 large free-range eggs
  • finely chopped flatleaf parsley, to garnish (optional)
  • salt and freshly ground black pepper

Method

Before starting this, make sure to preheat the oven to 220C/200C Fan/Gas 7.

  1. Lightly spray a 23cm frying pan with low-calorie cooking spray. Add the onion and mushrooms, season, and toss to mix well, make sure this is mixed very well.

  2. Spread in an even layer with the sausages. Spray with the cooking spray and bake for 10 minutes.

  3. Remove from the oven, scatter over the cherry tomatoes and spoon the beans over evenly.

  4. Return to the oven for another 5 minutes.

  5. Make two wells in the mixture, and carefully crack an egg into each one.

  6. Return the frying pan to the oven and cook for another 8 minutes. Season with salt and pepper, scatter over the parsley, and serve immediately.
