A No Hassle Recipe for Grandfather’s Soup

Anthropologists believe that humans have been eating basic soups for more than 20,000 years. They would have probably been eating soups even earlier but had to wait for someone to invent the soup bowl.

Grandfather’s soup is a traditional East European dish that has many variations. Don’t worry if Granddad can’t boil an egg, as he won’t need to be involved.  The soup derives its name from the fact it’s deemed readily digestible, and should therefore be highly agreeable with all those who may be a little long in the tooth.

Here’s a simple easy-to-follow recipe to prepare the tasty soup:

Grandfather’s Soup:

Ingredients

The Soup:

1 large onion, finely sliced

2 tbsp (30 g) butter

12 oz (350 g) potatoes, peeled and diced

1 medium carrot, peeled and cut into thin strips

1.5 pints (900 ml) beef stock

1 bay leaf

salt and freshly ground black pepper

Tip: Use floury potatoes such as King Edward or Maris Piper to make sure they achieve the proper texture

The Drop Noodles:

3 oz (75 g) raising flour

pinch salt

1 tbsp (15 g) butter

1 tbsp (15 g) fresh parsley, chopped (with a little extra for garnish)

1 egg, beaten

 

Method

Step 1 – In a wide heavy-based pan, cook the onion in the butter gently for around 10 minutes, or until they begin to brown.

Step 2 – Add the diced potatoes and carrot to the pan and cook for 2-3 minutes. Pour in the stock, add the bay leaf, and then the seasoning. Bring the mixture to the boil, reduce the heat, then cover and simmer for about 10 minutes.

Step 3 – To make the drop noodles; sift the flour into a bowl, add the salt, then rub in the butter. Next, stir in the parsley, add the egg, then knead the mixture to a soft dough.

Step 4 – Roll the dough into 1/2” balls and drop into the simmering soup. Cover and gently simmer the soup for 10 more minutes. Serve in pre-warmed soup bowls, then garnish with a little fresh parsley.

 

Serves 4 – each serving has approximately 240 kcal, 5 g protein, 33 g carbohydrate, 10 g fat and 2 g fibre
