{"id":873,"date":"2019-11-25T13:39:48","date_gmt":"2019-11-25T13:39:48","guid":{"rendered":"http:\/\/www.fiveminutesspare.com\/food\/?p=873"},"modified":"2019-11-25T13:39:48","modified_gmt":"2019-11-25T13:39:48","slug":"meat-free-recipe-vegetarian-shepherds-pie","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/meat-free-recipe-vegetarian-shepherds-pie\/meat-free-recipes\/","title":{"rendered":"Meat Free Recipe: Vegetarian Shepherd\u2019s Pie"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>\n2 red onions<br \/>\n2 carrots<br \/>\n2 sticks of celery<br \/>\n2 cloves of garlic<br \/>\na small bunch of fresh rosemary<br \/>\n2 x 400 g tins of lentils<br \/>\nolive oil<br \/>\n1 x 400 g tin of plum tomatoes<br \/>\n200 ml vegetable stock, preferably organic<br \/>\n1.5 kg Desiree potatoes<br \/>\nsea salt and freshly ground black pepper<br \/>\n150 g Cheddar cheese or vegan cheese, grated<br \/>\n100 ml whole milk or soya milk<br \/>\na large knob of butter or vegan margarine<br \/>\n1 fresh nutmeg, for grating<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/1v2tjp81p3k1k65g14acd8d1-wpengine.netdna-ssl.com\/wp-content\/uploads\/2013\/08\/Vegetarian-Shepherd%E2%80%99s-Pie-RS-N.jpg\" alt=\"Vegetarian Shepherd\u2019s Pie with broccoli on white plate\" \/><\/p>\n<p><strong>Method<\/strong><br \/>\nPeel and roughly chop the onions and carrots.<\/p>\n<p>Trim and roughly chop the celery.<\/p>\n<p>Peel and finely chop the garlic cloves.<\/p>\n<p>Pick the rosemary leaves, discard the stalks. Finely chop half of leaves, put the rest to one side.<\/p>\n<p>Drain the lentils.<\/p>\n<p>Heat a large pan on a medium heat. Add a good lug of olive oil and the onions, carrots, celery and garlic. Cook gently with the lid on for 8 to 10 minutes, stirring occasionally, or until softened.<\/p>\n<p>Add the chopped rosemary leaves, tinned tomatoes and stock and stir well. Bring to the boil, then add the drained lentils, reduce to a low heat and simmer gently for 30 minutes, or until thick and delicious.<\/p>\n<p>Peel the potatoes, cut them into halves and quarters depending on their size, and put them into a pan of salted, boiling water. Boil for about 10 minutes until tender. Stick a knife into them to check they\u2019re soft all the way through.<\/p>\n<p>Drain in a colander and return them to the pan.<\/p>\n<p>Grate the cheese. Add the milk, butter, most of the cheese and a pinch of salt and pepper to the pan. Finely grate in a few scrapings of nutmeg. Mash until smooth and creamy.<\/p>\n<p>Preheat the oven to 190\u00baC\/375\u00baF\/gas mark 5.<\/p>\n<p>Transfer the lentil mixture to a large ovenproof baking dish.
