{"id":672,"date":"2019-07-11T13:15:31","date_gmt":"2019-07-11T13:15:31","guid":{"rendered":"http:\/\/www.fiveminutesspare.com\/food\/?p=672"},"modified":"2019-07-11T13:15:31","modified_gmt":"2019-07-11T13:15:31","slug":"vegan-bean-enchilada-recipe","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/vegan-bean-enchilada-recipe\/meat-free-recipes\/","title":{"rendered":"Vegan Bean Enchilada Recipe"},"content":{"rendered":"<div class=\"ERSIngredientsHeader ERSHeading\"><strong>Ingredients<\/strong><\/div>\n<ul>\n<li class=\"ingredient\">8 medium size whole wheat tortillas or 6 large<\/li>\n<li class=\"ingredient\">1 large onion<\/li>\n<li class=\"ingredient\">2 medium-large potatoes<\/li>\n<li class=\"ingredient\">16 oz. of your favorite beans, rinsed and drained<\/li>\n<li class=\"ingredient\">1-2 zucchinis<\/li>\n<li class=\"ingredient\">1 cup fresh or frozen corn<\/li>\n<li class=\"ingredient\">\u00bc cup water<\/li>\n<li class=\"ingredient\">salt to taste<\/li>\n<li class=\"ingredient\">2 tsp of your favorite all-purpose seasoning<\/li>\n<li class=\"ingredient\">1 cup fresh cilantro<\/li>\n<li class=\"ingredient\">2 cups enchilada sauce<\/li>\n<li class=\"ingredient\">2 cups fat free spaghetti sauce<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-673 \" src=\"http:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2019\/07\/enchiladas_vegan_015-e1562850761135-229x300.jpg\" alt=\"\" width=\"282\" height=\"369\" srcset=\"https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2019\/07\/enchiladas_vegan_015-e1562850761135-229x300.jpg 229w, https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2019\/07\/enchiladas_vegan_015-e1562850761135.jpg 640w\" sizes=\"auto, (max-width: 282px) 100vw, 282px\" \/><\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li class=\"instruction\">preheat oven to 375 F<\/li>\n<li class=\"instruction\">cube potatoes, onion and zucchinis<\/li>\n<li class=\"instruction\">preheat skillet on medium heat, throw in veggies and add water<\/li>\n<li class=\"instruction\">add salt and spice<\/li>\n<li class=\"instruction\">stir, bring to sizzling, then reduce heat to low or medium low, cover and cook until potatoes are cooked through (about 15 minutes)<\/li>\n<li class=\"instruction\">add beans<\/li>\n<li class=\"instruction\">remove from heat<\/li>\n<li class=\"instruction\">add cilantro<\/li>\n<li class=\"instruction\">in a separate bowl combine enchilada and spaghetti sauce.<\/li>\n<li class=\"instruction\">prepare a baking dish\u2014spread a thin layer of mixed enchilada sauce on the bottom of it<\/li>\n<li class=\"instruction\">spread about \u00bc cup, or less if needed, over each tortilla<\/li>\n<li class=\"instruction\">add \u00bc-1\/3 cup of vegetable mixture, placing on toward the edge of tortilla, and roll up (to be true to the enchilada look, roll it in a tube;
