{"id":577,"date":"2019-05-23T10:04:29","date_gmt":"2019-05-23T10:04:29","guid":{"rendered":"http:\/\/www.fiveminutesspare.com\/food\/?p=577"},"modified":"2019-07-11T12:46:49","modified_gmt":"2019-07-11T12:46:49","slug":"this-weeks-meat-free-recipe-vegetarian-wellington","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/this-weeks-meat-free-recipe-vegetarian-wellington\/meat-free-recipes\/","title":{"rendered":"This week&#8217;s meat free recipe: Vegetarian wellington"},"content":{"rendered":"<p class=\"has-background\" style=\"background-color: #97d66b; font-size: 27px;\">Vegetarian wellington<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-578\" src=\"http:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2019\/05\/vegetarian-wellington.jpg\" alt=\"\" width=\"500\" height=\"454\" srcset=\"https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2019\/05\/vegetarian-wellington.jpg 500w, https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2019\/05\/vegetarian-wellington-300x272.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<p><span style=\"color: #000000;\"><strong>Serves 8\u00a0<\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>Ingredients:<\/strong><\/span><\/p>\n<ul>\n<li class=\"ingredients-list__item\">500g butternut squash (peeled and cut into 1cm dice)<\/li>\n<li>2 tbsp olive oil<\/li>\n<li>2 shallots (finely chopped)<\/li>\n<li>small bunch of sage ( leaves finely chopped)<\/li>\n<li>500g closed cup mushrooms (chopped)<\/li>\n<li>3 garlic cloves (crushed)<\/li>\n<li>150ml double cream<\/li>\n<li>200g fresh breadcrumbs<\/li>\n<li>150g cooked chestnuts (chopped)<\/li>\n<li>1\/2 tsp ground mace<\/li>\n<li>whole nutmeg (for grating)<\/li>\n<li>500g block puff pastry<\/li>\n<li>plain flour to dust<\/li>\n<li>6-8 cooked beetroot<\/li>\n<li>1 egg (beaten to glaze)<\/li>\n<li>1 tbsp sesame seeds or poppy seeds (to decorate)<\/li>\n<\/ul>\n<p><span style=\"color: #000000;\"><strong>Method:<\/strong><\/span><\/p>\n<ol>\n<li>Heat the oven to 200C\/180C fan\/gas 6. Toss the squash with 1 tbsp oil, half the sage and some seasoning. tip onto a baking tray and roast for 25 minutes until tender.<\/li>\n<li>Meanwhile, heat 1 tbsp oil in a large frying pan and fry the shallots for 10 minutes until tender. Add the mushrooms and fry for 15 minutes until softened and the liquid has evaporated.<\/li>\n<li>Add the garlic and remaining sage to the mushrooms, fry for a minute. Then add the double cream. Stir until it coats the mushrooms and no liquid remains. Fold in the breadcrumbs, mace, chestnuts and roast squash. Season everything well, adding a grating of nutmeg. Leave to cool before assembling the wellington.<\/li>\n<li>Roll\u00a0the\u00a0pastry out on a floured work surface to a 35 x 45cm rectangle. Transfer to a large parchment-lined baking sheet with one of the long lengths of the pastry\u00a0facing towards you. Spoon the mushroom and squash mixture\u00a0down the length of the pastry,\u00a0leaving a 7cm border along the top and 1cm on both sides. Brush all the exposed pastry with beaten egg.<\/li>\n<li>Put the beetroots in a line down the middle of the filling \u2013 they should be touching. Fold the filling-covered, long length of the pastry over the beets, using the paper to help you. Roll up and trim the pastry with a knife when it\u2019s overlapping by 1cm.<\/li>\n<li>Place the wellington seal-side down, and pinch the ends to seal. Egg wash the whole thing and use a fork or blunt cutlery knife to score the pastry in a pretty pattern. Chill until for at least 30 minutes, or up to 24 hours.<\/li>\n<li>Heat the oven to 200C\/180C fan\/gas 6. Brush the wellington with more beaten egg, sprinkle with the sesame or poppy seeds and bake for 45-50 minutes until golden brown and puffed up.
