{"id":497,"date":"2019-04-09T09:31:48","date_gmt":"2019-04-09T09:31:48","guid":{"rendered":"http:\/\/www.fiveminutesspare.com\/food\/?p=497"},"modified":"2019-04-09T09:31:48","modified_gmt":"2019-04-09T09:31:48","slug":"meals-under-400-calories-white-chicken-chilli","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/meals-under-400-calories-white-chicken-chilli\/low-calorie-meals\/","title":{"rendered":"Meals Under 400 Calories: White Chicken Chilli"},"content":{"rendered":"<p><strong>INGREDIENTS<\/strong><\/p>\n<p>\u00bd tablespoon olive oil<br \/>\n1 medium white onion, chopped<br \/>\n1 can mild green chiles (or sub 2 seeded and diced jalapenos)<br \/>\n1 tablespoon ground cumin<br \/>\n2 teaspoons chili powder<br \/>\n\u00bc teaspoon coriander<br \/>\n1\/4 teaspoon dried oregano<br \/>\n4 cups low sodium chicken broth<br \/>\n2 (15 ounce) cans chickpeas, rinsed and drained<br \/>\n\u00be teaspoon salt, plus more to taste<br \/>\nFreshly ground black pepper<br \/>\n3 cups shredded, cooked chicken breast (can also used shredded rotisserie chicken)<br \/>\n\u00bd cup frozen corn<br \/>\n1 medium lime, juiced<br \/>\n1\/3 cup fresh, chopped cilantro<\/p>\n<p><strong>For garnish:<\/strong><br \/>\nTortilla strips or chips<br \/>\nExtra cilantro<br \/>\nAvocado slices<br \/>\nExtra lime wedge<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.ambitiouskitchen.com\/wp-content\/uploads\/2019\/01\/White-Chicken-Chili-2-300x300.jpg\" \/><\/p>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>Start by adding 1 \u00bd cups of the rinsed and drained chickpeas (from one of the cans) and \u00bd cup water to a blender. Blend until somewhat smooth, adding a little more water if necessary.<\/li>\n<li>Add olive oil to a large dutch oven or large pot and place over medium high heat. Add onion and green chiles and cook until softened, about 3-4 minutes. Next stir in cumin, chili powder, coriander and dried oregano; allow the spices to cook for 30 seconds, then add in chicken broth, blended chickpeas, remaining whole chickpeas and salt and pepper. Simmer on low heat for 20-30 minutes.<\/li>\n<li>After 20 minutes, stir in the shredded chicken breast, corn, fresh lime juice and cilantro. Allow to cook for 5-10 more minutes. Serve with tortilla chips, an extra lime wedge and avocado if you\u2019d like. Serves 4.
