{"id":370,"date":"2019-02-04T14:25:36","date_gmt":"2019-02-04T14:25:36","guid":{"rendered":"http:\/\/www.fiveminutesspare.com\/food\/?p=370"},"modified":"2019-02-04T14:29:04","modified_gmt":"2019-02-04T14:29:04","slug":"under-400-calories-mexican-bean-soup-with-guacamole","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/under-400-calories-mexican-bean-soup-with-guacamole\/uncategorized\/","title":{"rendered":"Under 400 Calories: Mexican Bean Soup With Guacamole"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<p>1 large onion, finely chopped<br \/>\n1 red pepper, cut into chunks<br \/>\n2 garlic cloves, chopped<br \/>\n2 tsp mild chilli powder<br \/>\n1 tsp ground coriander<br \/>\n1 tsp ground cumin<br \/>\n400g can chopped tomatoes<br \/>\n400g can black beans<br \/>\n1 tsp vegetable bouillon powder<br \/>\n1 small avocado<br \/>\n1 lime, juiced<br \/>\n\u00bd red chilli, deseeded and finely chopped (optional), handful chopped coriander.<br \/>\n2 tsp rapeseed oil<\/p>\n<p><strong>Method<\/strong><\/p>\n<ol class=\"method__list\">\n<li class=\"method__item\">Heat the oil in a medium pan, add the onion (reserving 1 tbsp to make the guacamole later) and pepper and fry, stirring frequently, for 10 mins. Stir in the garlic and spices, then tip in the tomatoes and beans with their liquid, half a can of water and the bouillon powder. Simmer, covered, for 15 mins.<\/li>\n<li class=\"method__item\">Meanwhile, peel and de-stone the avocado and tip into a bowl, add the remaining onion, coriander and lime juice with a little chilli (if using) and mash well.
