{"id":350,"date":"2019-01-24T11:13:08","date_gmt":"2019-01-24T11:13:08","guid":{"rendered":"http:\/\/www.fiveminutesspare.com\/food\/?p=350"},"modified":"2019-01-24T11:15:03","modified_gmt":"2019-01-24T11:15:03","slug":"under-400-calories-spicy-meatballs-with-chilli-black-beans","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/under-400-calories-spicy-meatballs-with-chilli-black-beans\/uncategorized\/","title":{"rendered":"Under 400 Calories: Spicy Meatballs With Chilli Black Beans"},"content":{"rendered":"<h3>Ingredients<\/h3>\n<p>1 red onion, halved and sliced<br \/>\n2 garlic cloves, sliced<br \/>\n1 large yellow pepper, quartered, deseeded and diced<br \/>\n1 tsp ground cumin<br \/>\n2-3 tsp chipotle chilli paste<br \/>\n300ml reduced-salt chicken stock<br \/>\n400g can cherry tomatoes<br \/>\n400g can black beans or red kidney beans, drained<br \/>\n1 avocado, stoned, peeled and chopped<br \/>\njuice \u00bd lime<\/p>\n<p><strong>For the meatballs<\/strong><br \/>\n500g pack turkey breast mince<br \/>\n50g porridge oats<\/p>\n<p>2 spring onions, finely chopped<br \/>\n1 tsp ground cumin<br \/>\n1 tsp coriander<br \/>\nsmall bunch coriander, chopped, stalks and leaves kept separate<br \/>\n1 tsp rapeseed oil<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"\" src=\"https:\/\/www.bbcgoodfood.com\/sites\/default\/files\/styles\/recipe\/public\/user-collections\/my-colelction-image\/2015\/12\/spicy-meatballs-with-chilli-black-beans.jpg?itok=8Wne5Cfe\" alt=\"Spicy meatballs with chilli black beans\" width=\"338\" height=\"307\" \/><\/p>\n<h3>Method<\/h3>\n<ol>\n<li>First make the meatballs. Tip the mince into a bowl, add the oats, spring onions, spices and the coriander stalks, then lightly knead the ingredients together until well mixed. Shape into 12 ping-pong- sized balls. Heat the oil in a non-stick frying pan, add the meatballs and cook, turning them frequently, until golden. Remove from the pan.<\/li>\n<li>Tip the onion and garlic into the pan with the pepper and stir-fry until softened. Stir in the cumin and chilli paste, then pour in the stock. Return the meatballs to the pan and cook, covered, over a low heat for 10 mins. Stir in the tomatoes and beans, and cook, uncovered, for a few mins more.
