{"id":2716,"date":"2023-04-17T15:31:49","date_gmt":"2023-04-17T15:31:49","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2716"},"modified":"2023-04-17T15:31:49","modified_gmt":"2023-04-17T15:31:49","slug":"vegan-cottage-pie","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/vegan-cottage-pie\/general\/","title":{"rendered":"Vegan cottage pie"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the mashed potato topping<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1.5kg\/3lb 5oz\u00a0floury potatoes\u00a0(such as Maris Piper), peeled and cut into even chunks<\/li>\n<li class=\"recipe-ingredients__list-item\">125ml\/4fl oz dairy-free milk<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">salt and freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the meat-free base<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0onion, chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0carrots, peeled and diced<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0celery\u00a0sticks, diced<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0garlic\u00a0cloves, roughly chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">500g\/1lb 2oz frozen vegan mince<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp fresh\u00a0thyme\u00a0leaves<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0bay leaves<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp\u00a0cornflour<\/li>\n<li class=\"recipe-ingredients__list-item\">1 vegan\u00a0stock\u00a0cube<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0soy sauce<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp\u00a0tomato pur\u00e9e<\/li>\n<li class=\"recipe-ingredients__list-item\">salt and freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the topping, place the potatoes in a saucepan and cover with cold water and a good pinch of salt.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bring to the boil and cook until the potatoes are tender when pierced with a fork.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Drain the potatoes in a sieve then return to the pan and allow to steam dry for a few minutes.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Mash with a potato masher, add the dairy-free milk then beat with a wooden spoon.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Season with salt and pepper.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Meanwhile, to make the base, heat the oil in a large, shallow casserole dish over a medium\u2013high heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the onions, carrots and celery, season with salt and pepper and fry for 10 minutes, stirring every couple of minutes until starting to soften and take on some colour.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the garlic and fry for 2 minutes.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the vegan mince, thyme leaves and bay leaves and fry for 5 minutes, or until the mince is defrosted and the mixture is smelling delicious.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Sprinkle over the cornflour and stock cube. Add the soy sauce and tomato pur\u00e9e and pour in 800ml of just-boiled water from the kettle.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bubble for 5 minutes or until the sauce has thickened.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Preheat the grill to high.
