{"id":2713,"date":"2023-04-14T13:32:50","date_gmt":"2023-04-14T13:32:50","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2713"},"modified":"2023-04-14T13:32:50","modified_gmt":"2023-04-14T13:32:50","slug":"mary-berrys-easy-victoria-sandwich","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/mary-berrys-easy-victoria-sandwich\/desserts\/","title":{"rendered":"Mary Berry&#8217;s easy Victoria sandwich"},"content":{"rendered":"<p>This is made possible by BBC Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">4 free-range\u00a0eggs<\/li>\n<li class=\"recipe-ingredients__list-item\">225g\/8oz\u00a0caster sugar, plus a little extra for dusting the finished cake<\/li>\n<li class=\"recipe-ingredients__list-item\">225g\/8oz\u00a0self-raising flour<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0baking powder<\/li>\n<li class=\"recipe-ingredients__list-item\">225g\/8oz butter at room temperature, plus a little extra to grease the tins<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">To serve<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">good-quality strawberry or\u00a0raspberry jam<\/li>\n<li class=\"recipe-ingredients__list-item\">whipped\u00a0double cream\u00a0(optional)<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Preheat the oven to 180C\/160C Fan\/Gas 4.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Grease and line two 20cm\/8in sandwich tins.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Break the eggs into a large mixing bowl, then add the sugar, flour, baking powder and butter.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Mix together until well combined with an electric hand mixer, but be careful not to over mix.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Put a damp cloth under your bowl when you\u2019re mixing to stop it moving around.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">The finished mixture should fall off a spoon easily.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Divide the mixture evenly between the tins: this doesn\u2019t need to be exact, but you can weigh the filled tins if you want to check.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Use a spatula to remove all of the mixture from the bowl and gently smooth the surface of the cakes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bake the cakes on the middle shelf of the oven for 25 minutes. Check them after 20 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">The cakes are done when they\u2019re golden-brown and coming away from the edge of the tins.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Press them gently to check \u2013 they should be springy to the touch. Set aside to cool in their tins for 5 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Run a palette or rounded butter knife around the inside edge of the tins and carefully turn the cakes out onto a cooling rack.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To assemble the cake, place one cake upside down onto a plate and spread it with plenty of jam.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">If you want to, you can spread over whipped cream too.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Top with the second cake, top-side up.
