{"id":2684,"date":"2023-03-24T13:28:17","date_gmt":"2023-03-24T13:28:17","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2684"},"modified":"2023-03-24T13:28:17","modified_gmt":"2023-03-24T13:28:17","slug":"chicken-and-seafood-paella","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/chicken-and-seafood-paella\/general\/","title":{"rendered":"Chicken and seafood paella"},"content":{"rendered":"<p>This is made possible by BBC Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">3\u20134 tbsp\u00a0olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">4\u00a0chicken thighs, each cut into 2\u20133 chunky pieces<\/li>\n<li class=\"recipe-ingredients__list-item\">3\u00a0garlic\u00a0cloves, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">500g\/1lb 2oz fresh\u00a0tomatoes, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0smoked paprika<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u20132\u00a0squid\u00a0(defrosted if frozen), thinly sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">pinch\u00a0saffron<\/li>\n<li class=\"recipe-ingredients__list-item\">600ml\/1lb 5oz hot\u00a0chicken stock<\/li>\n<li class=\"recipe-ingredients__list-item\">300g\/10\u00bdoz bomba paella rice<\/li>\n<li class=\"recipe-ingredients__list-item\">300g\/10\u00bdoz raw king\u00a0prawns, shells on<\/li>\n<li class=\"recipe-ingredients__list-item\">250g\/9oz cooked vac-packed\u00a0mussels\u00a0(the garlic butter ones are fine)<\/li>\n<li class=\"recipe-ingredients__list-item\">1 roasted red\u00a0pepper\u00a0(homemade or from a jar), sliced into long strips<\/li>\n<li class=\"recipe-ingredients__list-item\">salt and freshly ground\u00a0black pepper<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0lemon, cut into wedges, to serve<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the olive oil in a large non-stick frying pan on high heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Once hot, fry the chicken for 5 minutes or until golden on the outside.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the garlic and tomatoes and stir to combine, then add the paprika and fry for a minute until fragrant.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the slices of squid and stir-fry for around 5 minutes until they start to colour, being careful to not overcook the garlic.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the saffron to the hot chicken stock and leave it to infuse for 1\u20132 minutes, then pour the stock into the pan.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bring the stock to the boil, then gently stir in the rice and season with salt and pepper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Reduce the temperature to a medium heat, give the rice one final stir then leave to cook, uncovered, for 20 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Do not be tempted to stir the paella again.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Yyou want the caramelised socarrat to form on the base.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Arrange the king prawns, mussels and roasted pepper on the top of the paella in a spiral pattern.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cover the pan with foil, increase the heat to medium-high and cook for a further 7 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Remove the pan from the heat and allow the paella to rest for 10 minutes, still covered.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Uncover the paella and serve with the lemon wedges, to squeeze on top.<\/p>\n<\/li>\n<\/ol>\n<p><em><strong>Banner and Image Credit: BBC<\/strong><\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is made possible by BBC Foods!
