{"id":2632,"date":"2023-03-03T11:28:20","date_gmt":"2023-03-03T11:28:20","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2632"},"modified":"2023-03-03T11:28:39","modified_gmt":"2023-03-03T11:28:39","slug":"lentil-and-basmati-khichdi","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/lentil-and-basmati-khichdi\/indian\/","title":{"rendered":"Lentil and basmati khichdi"},"content":{"rendered":"<p>This is made possible by BBC Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the lentil and basmati khichdi<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">120g\/4\u00bdoz\u00a0basmati rice, washed, soaked for 15 minutes and drained<\/li>\n<li class=\"recipe-ingredients__list-item\">240g\/8\u00bdoz\u00a0red lentils, washed, soaked for 15 minutes and drained<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp ground\u00a0turmeric<\/li>\n<li class=\"recipe-ingredients__list-item\">4 tsp\u00a0salt<\/li>\n<li class=\"recipe-ingredients__list-item\">4 tbsp vegetable\u00a0oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00bd tsp\u00a0cumin\u00a0seeds<\/li>\n<li class=\"recipe-ingredients__list-item\">1 dried red\u00a0chilli<\/li>\n<li class=\"recipe-ingredients__list-item\">4\u00a0garlic\u00a0cloves, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0onion, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">100g\/3\u00bdoz\u00a0cauliflower, cut into 1cm\/\u00bdin sized florets<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0carrot, cut into 1cm\/\u00bdin cubes<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd x 400g tin\u00a0chopped tomatoes<\/li>\n<li class=\"recipe-ingredients__list-item\">100g\/3\u00bd oz frozen petit pois (or garden\u00a0peas)<\/li>\n<li class=\"recipe-ingredients__list-item\">4 tbsp\u00a0ghee\u00a0(optional)<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the burnt aubergine relish<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">4 large\u00a0aubergines, 3 slits cut in the skin of each<\/li>\n<li class=\"recipe-ingredients__list-item\">12\u00a0garlic\u00a0cloves<\/li>\n<li class=\"recipe-ingredients__list-item\">4 tbsp\u00a0mustard oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp\u00a0sea salt<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0red onion, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">2 green\u00a0chillies, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp finely chopped fresh\u00a0coriander<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the lentil and basmati khichdi, combine the rice and the lentils in a large pan along with 2 litres pints of water.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the turmeric and bring to a boil. Once the liquid starts to boil, remove any scum from the surface and add 2 teaspoons of salt.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cook for 25\u201330 minutes.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add more boiling water, if needed, to cook the lentils. The rice will be thoroughly cooked by then.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat a wok over a medium-high heat. Add the oil, then add the cumin seeds and dried chilli and fry for a minute until the chilli changes colour and the cumin is slightly crisp.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the chopped garlic, fry until golden-brown, then add the chopped onion and cook for 22 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the cauliflower, carrot and reserved 2 teaspoons of salt and cook for 6\u20138 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Then add the tinned tomatoes and cook for another 6\u20138 minutes. Add the cooked rice and lentils to the pan with the tomatoes and mix well.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add more boiling water if the mixture is too thick. Add the peas and simmer for a couple of minutes, then remove from the heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the aubergine relish, stuff 3 garlic cloves into the slits in each aubergine.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Rub each aubergine with a little of the mustard oil, then burn the aubergine over an open flame on the hob for 30 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Once cooked, the aubergines will be soft and the flesh will give in easily to the touch. When the aubergine is cool enough to touch, remove the skin and the garlic cloves and discard them.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Chop the aubergine flesh, mix in the sea salt, red onion, chillies, coriander, and the remaining mustard oil.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To serve, divide the khichdi among serving bowls.
