{"id":2618,"date":"2023-02-27T13:21:12","date_gmt":"2023-02-27T13:21:12","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2618"},"modified":"2023-02-27T13:21:12","modified_gmt":"2023-02-27T13:21:12","slug":"mushroom-and-broccoli-stir-fry","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/mushroom-and-broccoli-stir-fry\/general\/","title":{"rendered":"Mushroom and broccoli stir fry"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">3\u20134 tbsp vegetable or groundnut oil<\/li>\n<li class=\"recipe-ingredients__list-item\">2 large\u00a0garlic\u00a0cloves, chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">2cm\/\u00bein piece fresh root\u00a0ginger, peeled and julienned<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0onion, thinly sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">300g\/10\u00bdoz tender stem broccoli, trimmed and each spear cut into 2\u20133 pieces<\/li>\n<li class=\"recipe-ingredients__list-item\">350g\/12oz\u00a0mushrooms, such as lion&#8217;s mane, king oyster and shiitake, sliced or halved depending on size<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd tsp chilli flakes<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0soy sauce<\/li>\n<li class=\"recipe-ingredients__list-item\">4 tbsp\u00a0black bean sauce<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0dry sherry\u00a0or Chinese Shaoxing rice wine<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0cornflour\u00a0mixed with 4 tbsp water<\/li>\n<li class=\"recipe-ingredients__list-item\">400g\/14oz fresh egg\u00a0noodles<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz\u00a0beansprouts<\/li>\n<li class=\"recipe-ingredients__list-item\">4\u00a0spring onions, sliced on the diagonal<\/li>\n<li class=\"recipe-ingredients__list-item\">small handful or\u00a0fresh coriander, roughly chopped<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">In a wok over a high heat add the oil, garlic and ginger and stir fry for 20\u201330 seconds until fragrant.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Then add the sliced onion and broccoli and keep stirring for a minute or two.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the mushrooms and continue to cook over a high heat, adding a little more oil if required.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Once the vegetables are slightly softened, sprinkle in the chilli flakes, soy sauce, black bean sauce and Shaoxing rice wine.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir well to combine.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the corn-starch mixture and allow the sauce to bubble and thicken.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Once slightly thickened, add the noodles and beansprouts.
