Put them in a mixing bowl and pour over the boiling water.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Leave to soak while you prepare the noodles.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Fill a saucepan with water, bring to the boil and cook the noodles according to the packet instructions, usually for about 5 minutes.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Drain when cooked, then tip back into the dry pan and set aside.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Drain the mushrooms, catching the soaking water in a medium saucepan and setting the mushrooms aside on a board.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the stock pots, ginger, garlic, star anise, cardamom, chilli, soy sauce, spring onions and tofu to the pan.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bring to the boil, then reduce to a simmer and cook for 15 minutes.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the choi sum or broccoli for the final 2 minutes of cooking.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Divide the noodles between two serving bowls, add the spinach, coriander and mushrooms, then pour over the stock.<\/p>\n<\/li>\n<li>Finish with a sprinkling of sesame seeds.<\/li>\n<\/ol>\n<p><em><strong>Banner and Image Credit: <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a><\/strong><\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is made possible by BBC Foods!
