{"id":2573,"date":"2023-02-09T16:11:58","date_gmt":"2023-02-09T16:11:58","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2573"},"modified":"2023-02-09T16:12:10","modified_gmt":"2023-02-09T16:12:10","slug":"mediterranean-puff-pastry-tart","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/mediterranean-puff-pastry-tart\/general\/","title":{"rendered":"Mediterranean puff pastry tart"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">280g\/10oz ready-rolled light\u00a0puff pastry<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz baby\u00a0courgettes, cut into 15mm\/\u215din slices<\/li>\n<li class=\"recipe-ingredients__list-item\">1 large red\u00a0pepper, cored, seeds removed, cut into 2cm\/\u00bein chunks<\/li>\n<li class=\"recipe-ingredients__list-item\">1 large yellow\u00a0pepper, cored, seeds removed, cut into 2cm\/\u00bein chunks<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0red onion, cut into 2cm\/\u00bein chunks<\/li>\n<li class=\"recipe-ingredients__list-item\">4\u00a0garlic\u00a0cloves, sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">2 sprigs\u00a0rosemary, leaves picked and finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">4 sprigs\u00a0thyme, leaves picked<\/li>\n<li class=\"recipe-ingredients__list-item\">olive oil\u00a0spray<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp semi-skimmed\u00a0milk<\/li>\n<li class=\"recipe-ingredients__list-item\">100g\/3\u00bdoz\u00a0cherry tomatoes, halved<\/li>\n<li class=\"recipe-ingredients__list-item\">75g\/2\u00beoz goats\u2019 cheese, crumbled<\/li>\n<li class=\"recipe-ingredients__list-item\">sea salt and freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Using a sharp knife, trim the sheet of puff pastry to 25 x 28cm.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Place it on a baking tray lined with baking parchment and score a border 2cm in from the edge all the way round.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Prick the pastry within the margin, using a fork. Leave to rest in the fridge for about an hour.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Meanwhile, preheat the oven to 240C\/220C Fan\/Gas 9.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Put the courgettes, pepper and red onion into a large bowl.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the garlic and herbs and season generously with salt and pepper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Line a large baking tray with baking parchment, lay the vegetables on it and spray 15 times with oil.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Brush the puff pastry all over with the milk and sprinkle with a little salt.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cook on the middle shelf of the oven, with the vegetable tray on the top shelf above, for 15 minutes, rotating both trays halfway through to ensure even colouring.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Remove both trays from the oven and reduce the temperature to 160C\/140C Fan\/Gas 3.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Set the vegetables aside.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Press the inside of the pastry down and return to the oven for 25 minutes to get a super-crisp base.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Take the tart case out of the oven and increase the temperature to 200C\/180C Fan\/Gas 6.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Tip the roasted vegetables into the tart case, scatter over the cherry tomatoes and goats\u2019 cheese and season with salt and pepper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bake for 20 minutes until the vegetables are cooked through and the cheese is softening and colouring at the edges.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cut the tart into quarters and serve.<\/p>\n<\/li>\n<\/ol>\n<p><em><strong>Banner and Image Credit: <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a><\/strong><\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is made possible by BBC Foods!
