{"id":2560,"date":"2023-02-06T16:34:11","date_gmt":"2023-02-06T16:34:11","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2560"},"modified":"2023-02-06T16:34:11","modified_gmt":"2023-02-06T16:34:11","slug":"beef-and-ale-stew-with-dumplings","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/beef-and-ale-stew-with-dumplings\/general\/","title":{"rendered":"Beef and ale stew with dumplings"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the beef and ale stew<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">2\u00a0cloves<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bc\u00a0cinnamon\u00a0stick<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0star anise<\/li>\n<li class=\"recipe-ingredients__list-item\">plain flour, for dusting<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp salt<\/li>\n<li class=\"recipe-ingredients__list-item\">1kg\/2lb 4oz\u00a0braising steak, cut into large pieces<\/li>\n<li class=\"recipe-ingredients__list-item\">3-4 tbsp\u00a0vegetable oil<\/li>\n<li class=\"recipe-ingredients__list-item\">4\u00a0carrots, chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0onions, cut into quarters<\/li>\n<li class=\"recipe-ingredients__list-item\">4\u00a0celery\u00a0stalks, trimmed, cut in half<\/li>\n<li class=\"recipe-ingredients__list-item\">3 large\u00a0Bramley apples, cored and diced<\/li>\n<li class=\"recipe-ingredients__list-item\">500ml\/18fl oz\u00a0ale<\/li>\n<li class=\"recipe-ingredients__list-item\">1.5 litres\/2\u00bd pints\u00a0chicken stock<\/li>\n<li class=\"recipe-ingredients__list-item\">1 bunch\u00a0rosemary, tied together with cook&#8217;s string<\/li>\n<li class=\"recipe-ingredients__list-item\">5\u00a0bay leaves<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the dumplings<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">115g\/4oz fresh white\u00a0breadcrumbs<\/li>\n<li class=\"recipe-ingredients__list-item\">115g\/4oz beef\u00a0suet<\/li>\n<li class=\"recipe-ingredients__list-item\">115g\/4oz\u00a0self-raising flour<\/li>\n<li class=\"recipe-ingredients__list-item\">pinch\u00a0salt<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp chopped fresh flatleaf\u00a0parsley\u00a0leaves<\/li>\n<li class=\"recipe-ingredients__list-item\">1 free-range\u00a0egg, beaten<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0milk<\/li>\n<li class=\"recipe-ingredients__list-item\">rapeseed oil\u00a0or melted butter, for glazing<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Preheat the oven to 140C\/275F\/Gas 1.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">For the stew, wrap the cloves, cinnamon and star anise in a clean piece of muslin.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Set aside.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Sprinkle the flour onto a plate and mix in the salt. Dredge the beef in the seasoned flour.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the oil in a large, heavy-based, lidded, flameproof casserole over a medium heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the beef in batches, frying for a few seconds on all sides, or until browned all over.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Remove from the casserole using a slotted spoon and set aside in a bowl.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Repeat the process with the remaining beef.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the carrots and fry, stirring regularly, for 8 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Remove from the casserole using a slotted spoon and set aside with the beef.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the onions and fry, stirring regularly, for 8 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the celery and fry, stirring regularly, for 6 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Return the beef and cooked vegetables to the casserole and stir well. Add the muslin bag and the apples and stir again.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Pour in the ale, stir well, then bring the mixture to the boil.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Pour in the stock, add the rosemary and bay leaves and return the mixture to the boil.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir well, then cover the casserole with the lid and reduce the heat until the mixture is just simmering.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Season, to taste, with salt.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Transfer the casserole to the oven and cook for 2\u00bd hours.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">For the dumplings, mix together the breadcrumbs, suet, self-raising flour, salt and parsley in a large bowl until well combined.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">In a jug, whisk together the egg and milk until well combined.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Make a well in the centre of the dry ingredients, then gradually pour the wet ingredients into it.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir the dry mixture into the wet mixture a little at a time, until the mixture comes together as a dough.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Roll the dough into eight equally-sized dumplings, then set aside.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">When the stew has been cooking for 2\u00bd hours and the meat is tender, remove the casserole from the oven and remove the lid.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Dot the dumplings onto the surface of the stew, leaving space between each.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Put the lid on the casserole and return it to the oven for a further 20 minutes, or until the dumplings have expanded.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Remove the casserole from the oven.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Remove the lid from the casserole and brush the tops of the dumplings with a little oil or melted butter.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Increase the oven temperature to 200C\/400F\/Gas 6.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Return the casserole to the oven.
