{"id":2523,"date":"2023-01-25T10:59:58","date_gmt":"2023-01-25T10:59:58","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2523"},"modified":"2023-01-25T10:59:58","modified_gmt":"2023-01-25T10:59:58","slug":"caraway-and-lemon-shortbread","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/caraway-and-lemon-shortbread\/desserts\/","title":{"rendered":"Caraway and lemon shortbread"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">250g\/9oz\u00a0plain flour<\/li>\n<li class=\"recipe-ingredients__list-item\">75g\/2\u00beoz ground rice or fine\u00a0semolina<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz\u00a0butter, softened<\/li>\n<li class=\"recipe-ingredients__list-item\">100g\/3\u00bdoz\u00a0caster sugar, plus 2 tbsp for sprinkling<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00bd tsp\u00a0caraway seeds, lightly crushed<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0lemon, grated zest only<\/li>\n<li class=\"recipe-ingredients__list-item\">salt<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Line a 20cm\/8in square baking tin with baking paper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Put the flour and ground rice in the bowl of a stand mixer and add a generous pinch of salt.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the butter, sugar, caraway seeds and lemon zest and beat until the ingredients come together.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Press the mixture evenly into the prepared tin, then chill in the fridge for at least 30 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Preheat the oven to 150C\/130C Fan\/Gas 2.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Sprinkle the shortbread with the remaining caster sugar and make indentations all over the shortbread with a fork \u2013 most of these will disappear but it helps the shortbread to bake evenly.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bake for around 20 minutes until the shortbread is very lightly golden.
