{"id":2520,"date":"2023-01-24T10:27:21","date_gmt":"2023-01-24T10:27:21","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2520"},"modified":"2023-01-24T10:27:21","modified_gmt":"2023-01-24T10:27:21","slug":"sri-lankan-dal-with-coconut-and-lime-kale-2","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/sri-lankan-dal-with-coconut-and-lime-kale-2\/general\/","title":{"rendered":"Sri Lankan dal with coconut and lime kale"},"content":{"rendered":"<p>This is made possible by BBC Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the lentils<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">300g\/10\u00bdoz\u00a0red lentils<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0coconut oil<\/li>\n<li class=\"recipe-ingredients__list-item\">8 fresh\u00a0curry leaves<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0lemongrass\u00a0stalk, halved and bashed<\/li>\n<li class=\"recipe-ingredients__list-item\">4\u00a0cloves<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0cinnamon\u00a0stick, halved<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0onion, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">3 large\u00a0garlic\u00a0cloves, crushed<\/li>\n<li class=\"recipe-ingredients__list-item\">2cm\/\u00bein piece fresh root\u00a0ginger, peeled and grated<\/li>\n<li class=\"recipe-ingredients__list-item\">3 green finger\u00a0chillies, thinly sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd tsp ground\u00a0turmeric<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00bd tsp fine\u00a0sea salt<\/li>\n<li class=\"recipe-ingredients__list-item\">400ml tin\u00a0coconut milk<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd\u00a0lime, juice only<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the rice<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">350g\/12oz\u00a0basmati rice<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0rapeseed oil<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00be tsp fine\u00a0sea salt<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the pickled red onions<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1\u00a0red onion, cut into very thin semi-circles<\/li>\n<li class=\"recipe-ingredients__list-item\">4 tbsp\u00a0lime juice\u00a0(from 2\u20133 limes)<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00be tsp fine\u00a0sea salt<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the kale<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1 tbsp\u00a0coconut oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp black\u00a0mustard seeds<\/li>\n<li class=\"recipe-ingredients__list-item\">150g\/5\u00bdoz\u00a0kale, sliced with thicker stems discarded<\/li>\n<li class=\"recipe-ingredients__list-item\">3 tbsp\u00a0desiccated coconut<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd tsp fine\u00a0sea salt<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">To serve<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">400g\/14oz plain\u00a0yoghurt<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the lentils, place the lentils in a large bowl and wash them in cold water until the water runs clear.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cover the lentils with 750ml water and set aside.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the coconut oil in a large saucepan over a medium heat and, when hot, add the curry leaves and lemongrass.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">When the curry leaves start to crackle, add the cloves and cinnamon. Stir-fry for 1 minute then add the onion.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cook for 12 minutes. Add the garlic, ginger and chillies.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir-fry for another couple of minutes, then add the turmeric and salt. Stir again and add the lentils and water to the pan.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bring to the boil, then turn the heat right down and simmer for 20 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the coconut milk and lime juice to the pan and simmer until the lentils are creamy.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cover to keep warm.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the rice, wash and soak the rice to get rid of excess starch by placing the rice in a bowl.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cover with water and agitate with your hands until the water turns cloudy.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Drain and repeat until the water is clear, then soak the rice for 10 minutes in hand-hot water.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the oil in a saucepan or wide lidded frying pan. Add the salt and the drained rice and stir to mix.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add 600ml\/20fl oz freshly boiled water. Bring to the boil, then place the lid on and turn the heat down to very low.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cook for 10 minutes.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Then take off the heat and leave to steam with the lid on for a further 10 minutes.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the pickled onions, put the onion in a bowl with the lime juice and salt.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Scrunch with your hands until slightly wilted, then set aside for a minimum of 15 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the kale, heat the coconut oil in a wide lidded frying pan. When hot, add the mustard seeds.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">When they pop, add the kale, desiccated coconut, salt, lime juice and 5 tablespoons water.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Toss and pop the lid on.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Leave to steam for 5 minutes.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To serve, place a bed of rice in four shallow bowls and ladle over the dal.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Divide the kale between the bowls and spoon over the yoghurt and pickled onion.<\/p>\n<\/li>\n<\/ol>\n<p><em><strong>Banner and Image Credit: <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a><\/strong><\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is made possible by BBC Foods!
