{"id":2517,"date":"2023-01-23T12:30:31","date_gmt":"2023-01-23T12:30:31","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2517"},"modified":"2023-01-23T12:30:31","modified_gmt":"2023-01-23T12:30:31","slug":"joes-wow-chicken-cauliflower-leek-and-bean-pie","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/joes-wow-chicken-cauliflower-leek-and-bean-pie\/general\/","title":{"rendered":"Joe\u2019s wow chicken, cauliflower, leek and bean pie"},"content":{"rendered":"<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1 head\u00a0cauliflower, leaves removed and cut into bite-sized florets<\/li>\n<li class=\"recipe-ingredients__list-item\">3 tbsp light\u00a0olive oil, plus extra for drizzling<\/li>\n<li class=\"recipe-ingredients__list-item\">1 large\u00a0leek, trimmed and cut into 2cm\/\u00bein pieces<\/li>\n<li class=\"recipe-ingredients__list-item\">400g\/14oz\u00a0chicken thighs, boneless, skin removed and diced<\/li>\n<li class=\"recipe-ingredients__list-item\">3 tbsp plain or\u00a0wholemeal flour<\/li>\n<li class=\"recipe-ingredients__list-item\">500ml\/18fl oz\u00a0chicken stock<\/li>\n<li class=\"recipe-ingredients__list-item\">200ml\/7fl oz\u00a0milk\u00a0(any type)<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0bay leaf<\/li>\n<li class=\"recipe-ingredients__list-item\">4 fresh\u00a0thyme\u00a0sprigs, leaves picked<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp reduced fat\u00a0cr\u00e8me fra\u00eeche<\/li>\n<li class=\"recipe-ingredients__list-item\">400g tin\u00a0cannellini beans, drained and rinsed<\/li>\n<li class=\"recipe-ingredients__list-item\">6\u20138 sheets\u00a0filo pastry<\/li>\n<li class=\"recipe-ingredients__list-item\">salt and freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">To serve<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">400g\/14oz\u00a0purple sprouting broccoli<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0olive oil<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Preheat the oven to 200C\/180C Fan\/Gas 6. Toss the cauliflower and 1 tablespoon oil in a 2.5 litre\/4\u00bd pints pie dish or large roasting tin. Roast for 30 minutes until starting to turn golden brown.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Meanwhile, heat 1 tablespoon oil in a large frying pan over a medium heat. Add the leek and gently cook for 7\u201310 minutes until softened. Transfer to a bowl and set aside.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Return the pan to the heat and add the remaining tablespoon of oil. Once hot, add the chicken pieces and cook until golden, turning as needed. Sprinkle the flour over the chicken in the pan and stir through, then gradually stir in the chicken stock, using a spoon to scrape up any golden crusty bits from the bottom of the pan. Once all the stock has been added, add the leeks back to the pan, along with the milk, bay leaf and thyme leaves. Stir until the sauce thickens, then take off the heat and stir in the cr\u00e8me fra\u00eeche and cannellini beans. Remove and discard the bay leaf, then taste and season with salt and pepper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Once the cauliflower is roasted, pour the contents of the frying pan into the pie dish. Take a piece of filo pastry and scrunch it up in your hand. Place on top of the pie filling in the dish, then repeat with the remaining filo to cover the top of the pie. Drizzle with a little olive oil and bake for 25\u201330 minutes until the pastry is golden and crisp.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To serve, heat a griddle pan. Massage the broccoli with the olive oil and griddle for 3\u20134 minutes, depending on the thickness of the broccoli stems.
