{"id":2510,"date":"2023-01-18T14:52:04","date_gmt":"2023-01-18T14:52:04","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2510"},"modified":"2023-01-18T14:52:04","modified_gmt":"2023-01-18T14:52:04","slug":"vegan-meatball-one-pot-pasta","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/vegan-meatball-one-pot-pasta\/vegetarian-eating\/","title":{"rendered":"Vegan meatball one-pot pasta"},"content":{"rendered":"<p>This is made possible by BBC Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the meatballs<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">250g\/9oz\u00a0cauliflower\u00a0florets, cooked and cooled (approx. half a head of\u00a0cauliflower)<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz frozen chopped\u00a0spinach, defrosted and squeezed dry<\/li>\n<li class=\"recipe-ingredients__list-item\">400g tin\u00a0black beans, drained<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0garlic\u00a0cloves, crushed or grated<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0soy sauce<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp\u00a0dried mixed herbs<\/li>\n<li class=\"recipe-ingredients__list-item\">150g\/5\u00bdoz\u00a0oats<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the sauce<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">2 x 400g tin\u00a0chopped tomatoes<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz roasted red\u00a0peppers\u00a0from a jar, drained<\/li>\n<li class=\"recipe-ingredients__list-item\">30g\/1oz\u00a0tomato pur\u00e9e<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0garlic\u00a0cloves, crushed or grated<\/li>\n<li class=\"recipe-ingredients__list-item\">olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">250g\/9oz\u00a0whole wheat pasta\u00a0(spaghetti or linguine)<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cook the cauliflower florets in a pan of boiling water for 8 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Drain thoroughly, then tip onto a plate lined with kitchen paper and leave to cool.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Grate the cooked cauliflower with a cheese grater into a bowl, then add the spinach, beans, garlic, soy sauce and mixed herbs.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Work the mixture together with a potato masher to form a rough paste.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Blend the oats to a fine powder with a stick blender, then add to the bowl and mix to combine.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">See the tips box below on how to make the veggie balls with a food processor.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Roll the mixture into balls, put on a tray or plate and chill for at least 30 minutes.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Preheat the oven to 180C\/160C Fan\/Gas 4.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the sauce, tip the tinned tomatoes into a jug with the peppers, tomato pur\u00e9e, garlic and 350ml\/12fl oz water.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Whizz to a smooth sauce with a stick blender.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat a splash of oil in an oven-proof, wide-lidded saucepan pan or casserole dish.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Fry the veggie balls in batches until golden-brown, transferring to a plate with a slotted spoon when done.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Pour half of the sauce into the pan, then arrange the dried pasta on top.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Spread the balls over the pasta, then pour over the remaining sauce.
