{"id":2495,"date":"2023-01-13T13:38:40","date_gmt":"2023-01-13T13:38:40","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2495"},"modified":"2023-01-13T13:38:40","modified_gmt":"2023-01-13T13:38:40","slug":"garlic-and-parmesan-mash","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/garlic-and-parmesan-mash\/general\/","title":{"rendered":"Garlic and Parmesan mash"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">2kg\/4lb 8oz\u00a0potatoes, such as Maris Piper, peeled and cut into large equal-sized chunks<\/li>\n<li class=\"recipe-ingredients__list-item\">8 fat\u00a0garlic\u00a0cloves, bruised and slightly splintered with the flat side of a wide-bladed knife, then slipped out of their skins<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0sea salt\u00a0flakes, plus extra to taste<\/li>\n<li class=\"recipe-ingredients__list-item\">75g\/2\u00bdoz unsalted\u00a0butter, softened<\/li>\n<li class=\"recipe-ingredients__list-item\">50g\/1\u00beoz\u00a0Parmesan, finely grated<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the optional topping<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">50g\/1\u00beoz dried\u00a0breadcrumbs\u00a0or panko<\/li>\n<li class=\"recipe-ingredients__list-item\">50g\/1\u00beoz unsalted\u00a0butter, in blobs or teaspoons<\/li>\n<li class=\"recipe-ingredients__list-item\">35g\/1\u00bcoz\u00a0Parmesan, finely grated<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Put the prepared potatoes and garlic into a very large pan, cover with cold water, add the salt, cover with a lid and bring to the boil over a high heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Put a colander over a large bowl or another pan and drain the potatoes, letting the starchy water collect underneath.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Do not throw this away: it is precious liquid .<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the butter to the hot, emptied-out potato pan, and let it start melting, then tip in the drained potatoes and garlic.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Dip a measuring cup into the cooking liquid, add about 125ml\/4fl oz and mash using your chosen method.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">You may want to add more of the cooking liquid. I never add less than 250ml\/9fl oz.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir the Parmesan in by hand and check for seasoning before transferring to a warm bowl.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">If you are making this in advance, butter a small roasting tin or ovenproof dish, measuring approx.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">30x25cm\/12x10in, and fill with the mashed potatoes, smoothing down the top.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Leave to cool, cover and place in the fridge for up to 3 days.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">On reheating, remove from the fridge and allow to come to room temperature, which will take an hour or two, depending on the weather.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Preheat the oven to 200C\/180C Fan\/Gas 6 and make a crumbly topping by rubbing the breadcrumbs together with the butter and Parmesan, then dot and sprinkle on top.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cook for about 30 minutes, or until piping hot all the way through.
