{"id":2470,"date":"2023-01-06T13:50:06","date_gmt":"2023-01-06T13:50:06","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2470"},"modified":"2023-01-06T13:50:06","modified_gmt":"2023-01-06T13:50:06","slug":"parsnip-sprout-and-chestnut-hotpot-with-cider-and-sprout-top-pesto","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/parsnip-sprout-and-chestnut-hotpot-with-cider-and-sprout-top-pesto\/general\/","title":{"rendered":"Parsnip, sprout and chestnut hotpot with cider and sprout top pesto"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">100g\/3\u00bdoz\u00a0pearl barley\u00a0or pearled spelt<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp olive or\u00a0rapeseed oil<\/li>\n<li class=\"recipe-ingredients__list-item\">250g\/9oz\u00a0shallots\u00a0or baby onions, peeled and cut in half<\/li>\n<li class=\"recipe-ingredients__list-item\">300g\/10\u00bdoz Brussels sprouts, trimmed and outer leaves removed<\/li>\n<li class=\"recipe-ingredients__list-item\">400g\/14oz\u00a0parsnips, peeled and cut into 2.5 cm\/1in chunks<\/li>\n<li class=\"recipe-ingredients__list-item\">150g\/5\u00bdoz cooked, peeled\u00a0chestnuts<\/li>\n<li class=\"recipe-ingredients__list-item\">150ml\/5fl oz medium-dry\u00a0cider<\/li>\n<li class=\"recipe-ingredients__list-item\">2 bay leaves, torn<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0thyme\u00a0sprigs<\/li>\n<li class=\"recipe-ingredients__list-item\">750ml\/26fl oz hot\u00a0vegetable stock<\/li>\n<li class=\"recipe-ingredients__list-item\">extra virgin olive oil, for drizzling<\/li>\n<li class=\"recipe-ingredients__list-item\">sea salt and freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the sprout top pesto<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">leafy tops from 1\u20132 Brussels sprout stems<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd\u00a0garlic\u00a0clove, finely chopped or grated<\/li>\n<li class=\"recipe-ingredients__list-item\">25g\/1oz walnuts or\u00a0pumpkin seeds<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0lemon, juice and zest<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u20133 tbsp extra virgin olive or\u00a0rapeseed oil<\/li>\n<li class=\"recipe-ingredients__list-item\">salt and freshly ground black\u00a0pepper<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Put the pearl barley into a large bowl, cover with cold water and leave to soak for 15 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the oil in a flameproof casserole dish over a medium heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the shallots, Brussels sprouts, parsnips, chestnuts, and season with salt and pepper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cook for 15 minutes, stirring only occasionally, until you get a golden-brown colour on the vegetables.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the cider and simmer for a couple of minutes, stirring and scraping the bottom of the pan to deglaze it, until the liquid has reduced to almost nothing.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Drain the pearl barley and rinse well.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add to the casserole dish with the bay leaves, thyme and stock. Stir well, bring to a simmer, then reduce the heat to low. Cover and simmer for 35\u201340 minutes, or until the barley is tender.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Check the seasoning.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Meanwhile, to make the pesto, strip any tough stalks from the Brussels leaves.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Roughly shred or chop the leaves and place into a food processor. Add the garlic, walnuts or pumpkin seeds and some salt and pepper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Blend until finely chopped, stopping once or twice to scrape down the sides.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add a squeeze of lemon juice and slowly trickle in the oil, whilst the processor is on.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stop when the ingredients have formed a coarse pesto \u2013 it\u2019s nicest if it\u2019s still a bit leafy and textured, rather than a smooth puree.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Taste and add more salt, pepper or lemon juice as needed.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Place into a bowl and finish with a few fine gratings of lemon zest.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To serve, spoon the hotpot into warmed bowls and top with the sprout top pesto.<\/p>\n<\/li>\n<\/ol>\n<p><em><strong>Banner and image Credit: <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a><\/strong><\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is made possible by BBC Foods!
