class=\"recipe-ingredients__list-item\">100g\/3\u00bdoz maraschino\u00a0cherries, drained and quartered<\/li>\n<li class=\"recipe-ingredients__list-item\">30g\/1oz\u00a0flaked almonds<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the ginger and chocolate variation<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">150g\/5\u00bdoz\u00a0dark chocolate, chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">80g\/3oz\u00a0crystallised ginger, finely chopped, plus extra for decorating<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the white chocolate, pistachio and orange variation<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">175g\/6oz\u00a0white chocolate, chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">100g\/3\u00bdoz\u00a0pistachio\u00a0nuts, chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0orange, zest only, grated, plus extra for decorating<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the cookie dough, whisk together the flour, baking powder, bicarbonate of soda and salt in a large bowl.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Place the butter and sugars in a separate large bowl and, using an electric hand-held mixer, beat together for about 5 minutes until light.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the egg, beating until fully combined, then briefly mix in the vanilla.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the flour mixture and mix just until a dough is formed.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">At this point, divide the dough into 3 equal quantities for the separate variations.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the almond and cherry variation, stir in the marzipan, cherries and almonds until combined.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the ginger and chocolate variation, set aside a third of the dark chocolate for decoration.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir the remaining chocolate and chopped crystallised ginger into the dough until combined.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the white chocolate, pistachio and orange variation, set aside 100g of the white chocolate for decoration and 20g of the pistachios.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir the remaining white chocolate, the pistachios and the orange zest into the dough until combined.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Chill the dough for 48 hours before baking.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">This process helps the flour to hydrate and makes for a better tasting cookie that is more likely to caramelise as it bakes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">You can skip this process but the dough will still need refrigerating for a few hours so that it can be rolled into balls and will bake without spreading too much.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Preheat the oven to 180C\/160C Fan\/Gas 4 and line two baking trays with baking paper. Use your hands or an ice cream scoop to form balls of dough.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Place onto the prepared baking trays, leaving 2.5\u20135cm between each cookie.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bake, in batches of six, for about 18 minutes or until golden around the edges but still slightly pale in the middle.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Leave to cool for a few minutes before transferring to a wire rack to cool completely.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To decorate the ginger and chocolate variation, melt the remaining dark chocolate in a heat-proof bowl over a pan of barely simmering water or in the microwave on a low heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir until smooth, then drizzle over the top of the cookies. Sprinkle the cookies with more finely chopped crystallised ginger and allow to cool.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To decorate the white chocolate, pistachio and orange variation, line a tray with baking paper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Melt the remaining white chocolate in a heat-proof bowl over a pan of barely simmering water or in the microwave on a low heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir until smooth, then dip the cookies halfway into the white chocolate.
