{"id":2410,"date":"2022-12-07T15:58:43","date_gmt":"2022-12-07T15:58:43","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2410"},"modified":"2022-12-07T15:58:43","modified_gmt":"2022-12-07T15:58:43","slug":"minted-lamb-stew","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/minted-lamb-stew\/general\/","title":{"rendered":"Minted lamb stew"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0sunflower oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1.2kg\/2lb11oz\u00a0lamb neck\u00a0fillet, cut into 5cm\/2in pieces<\/li>\n<li class=\"recipe-ingredients__list-item\">4 large banana\u00a0shallots, sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0leek, trimmed and sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0carrots, peeled and chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">3 large\u00a0garlic\u00a0cloves, crushed<\/li>\n<li class=\"recipe-ingredients__list-item\">55g\/2oz\u00a0plain flour<\/li>\n<li class=\"recipe-ingredients__list-item\">350ml\/12fl oz\u00a0red wine<\/li>\n<li class=\"recipe-ingredients__list-item\">300ml\/\u00bd pint\u00a0chicken stock<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp\u00a0Worcestershire sauce<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0redcurrant jelly<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0mint sauce<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp\u00a0soy sauce<\/li>\n<li class=\"recipe-ingredients__list-item\">large knob of\u00a0butter<\/li>\n<li class=\"recipe-ingredients__list-item\">250g\/9oz\u00a0chestnut mushrooms, halved<\/li>\n<li class=\"recipe-ingredients__list-item\">salt and freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Preheat the oven to 160C\/140C Fan\/Gas 3.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the oil in a deep ovenproof frying pan or a flameproof casserole. Fry the lamb in two batches over a high heat until browned.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Remove with a slotted spoon and set aside.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the shallots, leeks and carrots to the pan and fry for a few minutes over a high heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir in the garlic and fry for 30 seconds.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Meanwhile, measure the flour into a bowl. Add the wine and whisk until smooth.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Pour the stock and the red wine mixture into the pan with the vegetables and bring to the boil.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir until thickened. Add the Worcestershire sauce, redcurrant jelly, mint sauce and soy sauce.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Return the lamb to the pan, along with any resting juices. Stir and season with salt and pepper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bring to the boil and cook for a few minutes, then cover with a lid. Transfer to the oven and cook for about 1 hour 30 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the butter in a small frying pan over a high heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the mushrooms and fry until browned.
