{"id":2407,"date":"2022-12-07T10:34:07","date_gmt":"2022-12-07T10:34:07","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2407"},"modified":"2022-12-07T10:34:07","modified_gmt":"2022-12-07T10:34:07","slug":"black-pudding-meatballs","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/black-pudding-meatballs\/general\/","title":{"rendered":"Black pudding meatballs"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">500g\/1lb 2oz\u00a0minced\u00a0beef (not low fat)<\/li>\n<li class=\"recipe-ingredients__list-item\">250g\/9oz\u00a0black pudding<\/li>\n<li class=\"recipe-ingredients__list-item\">2 fat\u00a0garlic\u00a0cloves, grated<\/li>\n<li class=\"recipe-ingredients__list-item\">3 tbsp finely chopped\u00a0parsley, plus extra to serve<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp finely chopped\u00a0chives, plus extra to serve<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp dried\u00a0thyme<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0sea salt\u00a0flakes (or 1 tsp fine\u00a0sea salt)<\/li>\n<li class=\"recipe-ingredients__list-item\">a very good grinding\u00a0pepper<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bc tsp\u00a0dried chilli\u00a0flakes<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp porridge\u00a0oats\u00a0(not jumbo)<\/li>\n<li class=\"recipe-ingredients__list-item\">2 large free-range\u00a0eggs, at room temperature<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the tomato sauce<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">45g\/1\u00bdoz\u00a0beef dripping\u00a0or 3 tbsp olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0onions, roughly chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp dried\u00a0thyme<\/li>\n<li class=\"recipe-ingredients__list-item\">3 tbsp finely chopped flat-leaf\u00a0parsley<\/li>\n<li class=\"recipe-ingredients__list-item\">2 fat\u00a0garlic\u00a0cloves, grated<\/li>\n<li class=\"recipe-ingredients__list-item\">2 x 400g tins\u00a0chopped tomatoes<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp\u00a0tomato pur\u00e9e<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0Worcestershire sauce<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0sea salt\u00a0flakes (or 1 tsp fine\u00a0sea salt)<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Take the minced beef and black pudding out of the fridge so they lose their chill while you get on with the sauce.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Pour 400ml cold water into a measuring jug and put it by the hob.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the sauce, melt the dripping or warm the oil in a large heavy-based casserole then add the onion and cook over a medium heat, stirring every now.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">For about 15 minutes.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">When the onions are ready, stir in the dried thyme, parsley and garlic. Add the tomatoes, then swill out the empty tins with the water in your jug and pour it into the pan.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir in the tomato puree, Worcestershire sauce and salt and then turn up the heat to bring to the boil.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Once boiling, turn down the heat and simmer for 10 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Meanwhile, make the meatballs. Loosen the mince with your fingers as you drop it into a large bowl.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the black pudding, crumbling it in by hand. Add the garlic, parsley, chives, dried thyme, salt, pepper and chilli flakes, then sprinkle over the oats and crack in the eggs.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Mix this all together with your hands, making sure it\u2019s evenly incorporated.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Tear off walnut-sized lumps of the mixture and roll them between your palms to make meatballs, placing them on a lined baking sheet or large chopping board as you go.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">You should end up making about 40.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Drop the meatballs into the sauce in concentric circles, easing them in gently.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Try to get the meatballs covered by the sauce and then bring to a bubble.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Clamp on the lid, turn the heat down a bit, and let it simmer robustly for 15 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Take off the lid and give the pan a very gentle stir, then leave without a lid for another 15 minutes<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">By which time the meatballs should be cooked through.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Check the sauce for seasoning, then leave off the heat for 5\u201310 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Ladle into bowls, sprinkle with chives and parsley and eat with bread and butter or a buttery bowl of colcannon.<\/p>\n<\/li>\n<\/ol>\n<p><em><strong>Banner and Image Credit: <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a><\/strong><\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is made possible by BBC Foods!
