{"id":2330,"date":"2022-11-11T15:06:17","date_gmt":"2022-11-11T15:06:17","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2330"},"modified":"2022-11-11T15:06:54","modified_gmt":"2022-11-11T15:06:54","slug":"one-pot-cajun-rice","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/one-pot-cajun-rice\/general\/","title":{"rendered":"One-pot Cajun rice"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0smoked paprika<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp ground\u00a0cumin<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp\u00a0asafoetida\u00a0(or \u00bd tsp each of onion and garlic powder)<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0dried mixed herbs<\/li>\n<li class=\"recipe-ingredients__list-item\">4\u00a0chicken breasts, trimmed to be the same size<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0onion, chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0peppers, sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">4 sticks\u00a0celery, chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0carrots, chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz brown or\u00a0basmati rice<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0garlic\u00a0cloves, chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">1 chicken low-salt\u00a0stock\u00a0cube<\/li>\n<li class=\"recipe-ingredients__list-item\">16\u00a0olives<\/li>\n<li class=\"recipe-ingredients__list-item\">2 handfuls fresh\u00a0parsley, leaves picked and chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">1 lemon, juice only<\/li>\n<\/ul>\n<div class=\"recipe-main-info gel-layout__item gel-1\/1 gel-2\/3@l\">\n<div class=\"gel-layout recipe-method-list recipe-method--no-links\">\n<div class=\"recipe-method gel-layout__item\">\n<div class=\"recipe-method-wrapper\">\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Mix together the paprika, cumin, asafetida and dried mixed herbs in a bowl.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Then coat the chicken breasts in the spice mixture.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat half of the olive oil in a large lidded saucepan, add the chicken and drizzle the rest of the olive oil over the chicken.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Reserve any remaining spice mixture.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cook for 7 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Transfer the chicken to a plate and set aside.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Using the same pan as the chicken was cooked in, fry the onion for a few minutes, add the other vegetables and a splash of water.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cook for 3 minutes. Tip in the rice, garlic and add any leftover spice mixture. Cook for 1 minute, stirring so that it doesn\u2019t stick.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Pour in 250ml water and add the stock cube. Bring to the boil and reduce the heat to a simmer.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Place the chicken back on top of the rice mixture, cover with the lid and cook for 15 minutes, or until the rice is cooked through.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Top with the olives and parsley, and drizzle over the lemon juice.
