{"id":2313,"date":"2022-11-08T12:35:39","date_gmt":"2022-11-08T12:35:39","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2313"},"modified":"2022-11-08T12:35:39","modified_gmt":"2022-11-08T12:35:39","slug":"easy-tinned-tomato-risotto","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/easy-tinned-tomato-risotto\/general\/","title":{"rendered":"Easy tinned tomato risotto"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0olive oil, plus extra to serve<\/li>\n<li class=\"recipe-ingredients__list-item\">2 medium\u00a0onions, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0garlic\u00a0cloves, crushed<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd tsp\u00a0dried mixed herbs\u00a0or dried oregano, plus extra to garnish<\/li>\n<li class=\"recipe-ingredients__list-item\">400g tin\u00a0chopped tomatoes<\/li>\n<li class=\"recipe-ingredients__list-item\">300g\/10\u00bdoz\u00a0risotto rice<\/li>\n<li class=\"recipe-ingredients__list-item\">1 vegetable or\u00a0chicken stock\u00a0cube<\/li>\n<li class=\"recipe-ingredients__list-item\">900ml\/1\u00bd pint freshly boiled water<\/li>\n<li class=\"recipe-ingredients__list-item\">40g\/1\u00bdoz\u00a0cheddar, finely grated<\/li>\n<li class=\"recipe-ingredients__list-item\">salt\u00a0and ground black pepper<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat 1 tablespoon of the oil in a saucepan, preferably a large one, and fry the onions over medium heat for 8 minutes.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the garlic and mixed herbs.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Continue to fry for 1 minute. Then add the chopped tomatoes. Season well with a little salt and lots of black pepper and simmer for 5 minutes to reduce the liquid.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the risotto rice and stir for a minute to coat in the tomato sauce. Next, add the stock cube with around 100ml of hot water.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir continuously and, once the water has been absorbed, add some more water.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Keep repeating until the rice is cooked and looks rich and creamy.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add a little more water if needed until the right consistency is reached. Remove from the heat and stir in almost all of the grated cheddar.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Adjust the seasoning to taste.
