{"id":2287,"date":"2022-10-25T14:37:31","date_gmt":"2022-10-25T14:37:31","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2287"},"modified":"2022-10-25T14:37:31","modified_gmt":"2022-10-25T14:37:31","slug":"curried-pumpkin-soup","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/curried-pumpkin-soup\/general\/","title":{"rendered":"Curried pumpkin soup"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1kg\/2lb 4oz\u00a0pumpkin, peeled, seeds removed and flesh cut into 7cm\/2\u00bein chunks<\/li>\n<li class=\"recipe-ingredients__list-item\">3\u20134 tbsp\u00a0olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp\u00a0salt, plus extra if desired<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp\u00a0chilli powder<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp ground\u00a0coriander<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp ground\u00a0cumin<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0onion, roughly chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">3\u00a0tomatoes, cut into quarters<\/li>\n<li class=\"recipe-ingredients__list-item\">6\u20138\u00a0garlic\u00a0cloves, flattened and peeled<\/li>\n<li class=\"recipe-ingredients__list-item\">400ml tin\u00a0coconut milk<\/li>\n<li class=\"recipe-ingredients__list-item\">freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the tarka<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">4 tbsp\u00a0vegetable oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp\u00a0cumin\u00a0seeds<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp black\u00a0mustard seeds<\/li>\n<li class=\"recipe-ingredients__list-item\">4\u20136\u00a0garlic\u00a0cloves, thinly sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u20133 green jalape\u00f1o chillies, thinly sliced<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<p>Before starting this recipe, make sure to preheat the oven to 180C\/160C Fan\/Gas 4.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Rub the pumpkin with the oil and sprinkle with the salt, chilli powder, ground coriander and ground cumin.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add to a large roasting tin along with the onion, tomatoes and garlic. Roast for 1\u00bd hours, turning every 30 minutes to make sure everything is soft and caramelised.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Once the vegetables are tender, tip everything from the roasting tin into a food processor and blend with the coconut milk until smooth. Pour into a large saucepan or casserole and keep warm.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Season with salt and pepper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add a splash of water if needed to thin the soup.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the tarka, heat the oil in the smallest saucepan you have and add the cumin seeds.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Once they start to pop, add the black mustard seeds, garlic and chillies. Cook for 1 minute until the garlic is just lightly browned then take off the heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Immediately spoon the tarka over the soup and cover with a lid.
