{"id":2266,"date":"2022-10-13T12:07:36","date_gmt":"2022-10-13T12:07:36","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2266"},"modified":"2022-10-13T12:07:36","modified_gmt":"2022-10-13T12:07:36","slug":"mushroom-doner","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/mushroom-doner\/general\/","title":{"rendered":"Mushroom doner"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the chilli sauce<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1 x 400g tin\u00a0chopped tomatoes<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp rose\u00a0harissa<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0caster sugar<\/li>\n<li class=\"recipe-ingredients__list-item\">a good squeeze of lemon juice<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the onion<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1\u00a0onion, very thinly sliced into half moons<\/li>\n<li class=\"recipe-ingredients__list-item\">2 level tsp\u00a0white wine vinegar<\/li>\n<li class=\"recipe-ingredients__list-item\">20g\/\u00beoz flatleaf\u00a0parsley, finely chopped<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the yoghurt sauce<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">150g\/5\u00bdoz plain\u00a0yoghurt<\/li>\n<li class=\"recipe-ingredients__list-item\">1 heaped tsp dried\u00a0mint<\/li>\n<li class=\"recipe-ingredients__list-item\">salt and freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the \u2018doner\u2019<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">500g\/1lb 2oz\u00a0oyster mushrooms, very thinly sliced lengthways<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp garlic\u00a0oil<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp sweet\u00a0paprika<\/li>\n<li class=\"recipe-ingredients__list-item\">2 heaped tsp ground\u00a0coriander<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0celery\u00a0salt<\/li>\n<li class=\"recipe-ingredients__list-item\">3 tsp\u00a0garlic\u00a0granules<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd tsp freshly ground\u00a0black pepper<\/li>\n<li class=\"recipe-ingredients__list-item\">4 white\u00a0pitta breads<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the garnish<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">\u00bc small\u00a0white cabbage, very finely shredded<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0tomatoes, sliced cut into half moons<\/li>\n<li class=\"recipe-ingredients__list-item\">4\u20136 pickled\u00a0chillies, thinly sliced (optional)<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<p>Before starting this dish, be sure to preheat the oven to 180C\/200C Fan\/Gas 4.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the chilli sauce, heat the chopped tomatoes, rose harissa, sugar and lemon juice in a small saucepan over medium heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bring to a gentle boil and cook for 10 minutes.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Remove from the heat and set aside to cool.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">You can blend the sauce until it\u2019s smooth using a hand-blender if you like, or just leave it chunky.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">For the onion, mix together the onion slices, vinegar and parsley and set aside.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the yoghurt sauce, mix the yoghurt with the dried mint, season with salt and pepper and set aside.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Put the pittas in the oven to warm for 5 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the &#8216;doner,&#8217; heat a frying pan over medium-high heat. Add the mushrooms and dry-fry for 2 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the garlic oil, paprika, coriander, celery salt, garlic granules and black pepper and quickly coat the mushrooms.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add 3 tablespoons of water to the pan and stir-fry for 1 minute before removing from the heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Split the warmed pitta pieces of bread. Spoon a little white cabbage into each pitta and add a little tomato and onion.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Divide the mushrooms between the pittas, add a little more cabbage and tomato, then drizzle with the chilli and yoghurt sauces.
