{"id":2251,"date":"2022-09-29T08:25:33","date_gmt":"2022-09-29T08:25:33","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2251"},"modified":"2022-09-29T08:25:33","modified_gmt":"2022-09-29T08:25:33","slug":"double-chocolate-cookies","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/double-chocolate-cookies\/desserts\/","title":{"rendered":"Double chocolate cookies"},"content":{"rendered":"<p>This is made possible by BBC Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">125g\/4\u00bdoz dark chocolate, chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">175g\/6oz unsalted butter, softened<\/li>\n<li class=\"recipe-ingredients__list-item\">175g\/6oz light soft brown sugar<\/li>\n<li class=\"recipe-ingredients__list-item\">75g\/2\u00beoz caster sugar<\/li>\n<li class=\"recipe-ingredients__list-item\">2 free-range eggs, lightly beaten<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp vanilla extract<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz plain flour<\/li>\n<li class=\"recipe-ingredients__list-item\">40g\/1\u00bdoz cocoa powder<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp bicarbonate of soda<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd tsp baking powder<\/li>\n<li class=\"recipe-ingredients__list-item\">good pinch salt<\/li>\n<li class=\"recipe-ingredients__list-item\">250g\/9oz white chocolate, chopped into 1cm\/\u00bdin pieces<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Melt the dark chocolate in a heatproof bowl over a saucepan of barely simmering water. Stir until smooth, remove from the heat and leave to cool slightly.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">in a bowl, beat the soft butter with both sugars with a wooden spoon for about 1 minute until smooth and combined but not fluffy.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Gradually add the beaten eggs, mixing well between each addition. Add the vanilla and mix again.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Pour the melted chocolate into the mixture and mix until combined. Scrape down the sides of the bowl with a spatula. Sift in the flour, cocoa, bicarbonate of soda, baking powder and salt.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Mix again until thoroughly combined. Line two large baking trays with baking paper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Fold three-quarters of the white chocolate into the cookie mixture. Using two dessertspoons, shape the mixture into 20\u201322 roughly-shaped but evenly-sized balls (each roughly 55g\/2oz) and place on a lined baking tray.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Press the remaining white chocolate into the cookie dough balls. Cover and chill for 1 hour until firm, then roll each cookie ball in your hands until you have a smooth, firm ball. Cover and chill again for 4 hours or overnight.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Preheat the oven to 170C\/150C Fan\/Gas 3.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Place 8 dough balls on each baking tray allowing plenty of space between each one as the cookies will spread during cooking.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bake for 12 minutes and then remove from the oven.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Now you have two choices \u2013 either bang the bottom of the tray on the work surface to deflate the cookies or take a 10cm\/4in cutter and place a cookie inside the cutter, still on the baking tray, and swirl it round and round to make an even, neat round cookie.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Repeat with all the cookies. Return the cookies to the oven for a further 2\u20134 minutes until firm but not crisp.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">The cookies are soft after baking but will firm up further on cooling. Continue baking the cookies in batches.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Leave to cool on the baking trays until firm and then transfer to a wire rack to cool completely.
