{"id":2235,"date":"2022-09-26T08:26:37","date_gmt":"2022-09-26T08:26:37","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2235"},"modified":"2022-09-26T08:26:37","modified_gmt":"2022-09-26T08:26:37","slug":"easy-thai-green-curry","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/easy-thai-green-curry\/uncategorized\/","title":{"rendered":"Easy Thai green curry"},"content":{"rendered":"<p>This is made possible by BBC Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1 tbsp vegetable oil<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp Thai green curry paste (according to taste)<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp soft dark brown sugar<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u20132 thick stalks lemongrass, fat ends bashed with a rolling pin (optional)<\/li>\n<li class=\"recipe-ingredients__list-item\">750g\/1\u00bdlb skinless, boneless chicken chicken breast, cut into chunks<\/li>\n<li class=\"recipe-ingredients__list-item\">6\u20138 kaffir lime leaves, torn into pieces (if unavailable, use the grated zest of 1 lime)<\/li>\n<li class=\"recipe-ingredients__list-item\">400ml tin coconut milk<\/li>\n<li class=\"recipe-ingredients__list-item\">good shake of Thai fish sauce or light soy sauce<\/li>\n<li class=\"recipe-ingredients__list-item\">large handful of coriander, roughly chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd\u20131 lime, juice only<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the oil in a wok or large frying pan.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the green curry paste and sugar and cook over a fairly high heat for about a minute, stirring with the lemongrass.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Reduce the heat slightly and stir in the chicken pieces and lime leaves or zest until coated in the paste.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the coconut milk, fish sauce or soy sauce and bring to a simmer, cooking for 30 minutes until thickened slightly.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir in the coriander and lime juice.
