{"id":2216,"date":"2022-09-21T09:21:54","date_gmt":"2022-09-21T09:21:54","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2216"},"modified":"2022-09-21T09:21:54","modified_gmt":"2022-09-21T09:21:54","slug":"roast-chicken-dinner-for-one","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/roast-chicken-dinner-for-one\/general\/","title":{"rendered":"Roast chicken dinner for one"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">300g\/10\u00bdoz\u00a0potatoes\u00a0(1 large baking\u00a0potato\u00a0or 2\u20133 medium\u00a0potatoes), peeled and cut into roughly 4cm\/1\u00bdin chunks<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u20133\u00a0carrots, peeled and cut in half lengthways (or quarters if they are very large)<\/li>\n<li class=\"recipe-ingredients__list-item\">3 tbsp\u00a0vegetable oil<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0chicken thighs, bone in and skin on (see recipe tip, below, if cooking as part of the meal plan)<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bc tsp\u00a0dried mixed herbs<\/li>\n<li class=\"recipe-ingredients__list-item\">120g\/4\u00bcoz frozen\u00a0peas<\/li>\n<li class=\"recipe-ingredients__list-item\">salt and ground\u00a0black pepper<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the simple gravy<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1 tbsp\u00a0vegetable oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp\u00a0plain flour<\/li>\n<li class=\"recipe-ingredients__list-item\">175ml\/6fl oz hot\u00a0chicken stock, made with \u2153\u00a0chicken stock\u00a0cube<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bc tsp\u00a0soy sauce<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<p>Before starting this dish, make sure to preheat the oven to 210C\/190C Fan\/Gas 6\u00bd.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Put the potatoes and carrots in a roasting tin.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Drizzle with the oil and toss together well.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the chicken to the tin, skin-side up, and sprinkle with the herbs. Season the chicken and vegetables with a little salt and lots of pepper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Roast for 40 minutes. Turn the vegetables after they have been roasting for 20 minutes.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">The chicken is cooked through when the juices run clear with no trace of pink when it is pierced with the tip of a knife.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Meanwhile, ten minutes before the chicken is ready, make the gravy. Pour the oil into a small saucepan and stir in the flour with a wooden spoon.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Place over a medium heat and slowly add the chicken stock, just a little at a time, stirring constantly.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the soy sauce for a little extra colour and simmer gently for 3 minutes.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cook the peas according to the packet instructions and drain.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Put 2 chicken thighs on a plate with the roasted potatoes and carrots, add the peas and pour over a little of the gravy.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Serve the rest of the gravy separately.
