{"id":2193,"date":"2022-09-14T13:45:17","date_gmt":"2022-09-14T13:45:17","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2193"},"modified":"2022-09-14T13:45:17","modified_gmt":"2022-09-14T13:45:17","slug":"easy-chicken-and-chorizo-rice","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/easy-chicken-and-chorizo-rice\/general\/","title":{"rendered":"Easy chicken and chorizo rice"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1 tbsp\u00a0olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">85g\/3oz\u00a0chorizo, halved and sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd large\u00a0onion, sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz\u00a0chicken thigh\u00a0fillets, chopped into 2\u00bdcm\/1in pieces<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0garlic\u00a0clove, finely sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">1 green\u00a0pepper, sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">110g\/4oz\u00a0basmati rice<\/li>\n<li class=\"recipe-ingredients__list-item\">200ml\/7fl oz\u00a0chicken stock\u00a0(\u00bd stock cube dissolved)<\/li>\n<li class=\"recipe-ingredients__list-item\">salt and freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the olive oil in a large saucepan with a tight fitting lid and fry the chorizo over a high heat for 1 minute.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the onions and fry for a further minute, then add the chicken and garlic and cook for 5 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the pepper and basmati rice and stir well to combine.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Pour in the chicken stock and stir,\u00a0 put the lid on and leave for 12 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Turn the heat off but do not remove the lid and leave for a further 12 minutes, then remove the lid and give it a good stir with a fork.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">The water should be absorbed.
