{"id":2166,"date":"2022-09-07T12:28:51","date_gmt":"2022-09-07T12:28:51","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2166"},"modified":"2022-09-07T12:28:51","modified_gmt":"2022-09-07T12:28:51","slug":"cook-up-rice","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/cook-up-rice\/general\/","title":{"rendered":"Cook-up rice!"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">300g\/10\u00bdoz\u00a0basmati rice<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp vegetable or rapeseed\u00a0oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp dark brown\u00a0muscovado sugar<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u20133\u00a0garlic\u00a0cloves<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0onion, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp grated\u00a0ginger<\/li>\n<li class=\"recipe-ingredients__list-item\">1 x 400g\/14oz tin cooked pigeon peas (or\u00a0black eyed beans\u00a0or red kidney beans), drained<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz\u00a0pumpkin\u00a0or seasonal squash, peeled and chopped into chunks<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0carrots, peeled and cubed<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0okra, sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">150g\/5\u00bdoz baby\u00a0spinach<\/li>\n<li class=\"recipe-ingredients__list-item\">250ml\/9fl oz\u00a0coconut milk<\/li>\n<li class=\"recipe-ingredients__list-item\">few sprigs\u00a0thyme<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0Scotch bonnet chilli, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp\u00a0salt<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp freshly ground\u00a0black pepper<\/li>\n<li class=\"recipe-ingredients__list-item\">15g\/\u00bdoz\u00a0coriander, roughly chopped<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Tip the rice into a bowl and rinse with cold water.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Drain, then set aside while doing the rest of the steps!<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the oil in a pan over a low heat and add the sugar. Keep the heat on low and wait for the sugar to caramelise.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Once the sugar starts to bubble, stir in the garlic, onion and ginger.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the drained peas, pumpkin, carrots, okra and baby spinach.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Mix well to make sure the vegetables don\u2019t stick to the pan.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Before the spinach starts to wilt, add 250ml water with the coconut milk, thyme sprigs and Scotch bonnet.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Season with the salt and pepper, then add the rice. Stir until everything is mixed together and the veg is evenly distributed throughout the rice.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Reduce the heat to low, cover and leave to simmer for 20 minutes or until all the liquid has evaporated.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Turn off the heat and leave the pan covered for a further 20 minutes.
