{"id":2136,"date":"2022-08-30T15:44:48","date_gmt":"2022-08-30T15:44:48","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2136"},"modified":"2022-08-30T15:44:48","modified_gmt":"2022-08-30T15:44:48","slug":"easy-vegetable-curry","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/easy-vegetable-curry\/general\/","title":{"rendered":"Easy vegetable curry"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">2 medium\u00a0potatoes\u00a0(around 350g\/12oz), peeled and cut into 2cm chunks<\/li>\n<li class=\"recipe-ingredients__list-item\">1 large\u00a0carrot, peeled and sliced diagonally<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd\u00a0cauliflower\u00a0(around 300g\/10\u00bdoz), cut into small florets and halved<\/li>\n<li class=\"recipe-ingredients__list-item\">3 tbsp sunflower or\u00a0vegetable oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1 large\u00a0onion, coarsely grated or very finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp medium or hot\u00a0curry powder<\/li>\n<li class=\"recipe-ingredients__list-item\">1 x 227g tin\u00a0chopped tomatoes<\/li>\n<li class=\"recipe-ingredients__list-item\">300ml\/10fl oz vegetable or chicken stock (made with \u00bd cube), gluten-free if required<\/li>\n<li class=\"recipe-ingredients__list-item\">100g\/3\u00bdoz frozen peas or two large handfuls of young spinach\u00a0leaves, or a mixture<\/li>\n<li class=\"recipe-ingredients__list-item\">plain yogurt or vegan alternative, to serve<\/li>\n<li class=\"recipe-ingredients__list-item\">mango chutney, to serve<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Half-fill a saucepan with cold water and add the potatoes and carrots. Bring to a boil and cook for 8 minutes.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the cauliflower florets and cook for 2 minutes more. Drain in a colander and set aside.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the oil in a large, non-stick frying pan or wide-based saucepan.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the onion and cook over medium heat for 8 minutes or until well softened and lightly browned.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Sprinkle over the curry powder and cook for 30 seconds more, stirring.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the tomatoes to the onions and cook for 3 minutes, stirring constantly.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the stock and bring to a gentle simmer.
