{"id":2120,"date":"2022-08-11T09:21:17","date_gmt":"2022-08-11T09:21:17","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2120"},"modified":"2022-08-11T09:21:17","modified_gmt":"2022-08-11T09:21:17","slug":"chicken-and-pepper-quesadillas","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/chicken-and-pepper-quesadillas\/general\/","title":{"rendered":"Chicken and pepper quesadillas"},"content":{"rendered":"<p>This is made possible by BBC Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the shredded chicken<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">4 tbsp taco seasoning<\/li>\n<li class=\"recipe-ingredients__list-item\">3 chicken breast fillets, boneless and skin removed<\/li>\n<li class=\"recipe-ingredients__list-item\">5 chicken thigh fillets, boneless and skin removed<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">250ml\/9fl oz passata<\/li>\n<li class=\"recipe-ingredients__list-item\">250ml\/9fl oz chicken stock<\/li>\n<li class=\"recipe-ingredients__list-item\">2 bay leaves<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp cider vinegar<\/li>\n<li class=\"recipe-ingredients__list-item\">salt and freshly ground black pepper<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the filling<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">2 tbsp olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1 onion, thinly sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">1 red pepper, thinly sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">1 green pepper, thinly sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">2 garlic cloves, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp taco seasoning<\/li>\n<li class=\"recipe-ingredients__list-item\">1 lime, juice only<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the quesadilla<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">12 flour tortillas<\/li>\n<li class=\"recipe-ingredients__list-item\">400g\/14 oz cheese, such as Monterey Jack or cheddar, grated<\/li>\n<li class=\"recipe-ingredients__list-item\">4 avocados, thinly sliced (optional)<\/li>\n<\/ul>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">For the shredded chicken, rub the seasoning all over the chicken.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the oil in a large lidded saucepan or casserole and fry the chicken for 5 minutes, or until golden-brown.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Pour over the passata and stock and tuck in the bay leaves. Add the cider vinegar and season with salt and pepper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bring to the boil, turn down the heat, cover and leave to simmer gently for 2 hours.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">When the chicken is very tender, carefully remove from the sauce and transfer to a plate.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Shred with a couple of forks. Continue to simmer the sauce for 30 minutes, or until very thick.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir the shredded chicken back into the sauce.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">For the filling, heat the oil in a large frying pan or skillet. Add the onion and peppers and fry on a fairly high heat for about 6\u20138 minutes, or until lightly browned but still with some bite.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the garlic and cook for a further couple of minutes. Add the shredded chicken, taco seasoning and lime juice and cook until heated through.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To make the quesadilla, heat a flat skillet or large frying pan and add a tortilla. Spread some of the filling on half of the tortilla and sprinkle generously with cheese.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Top with avocado, spring onions, jalape\u00f1os and coriander, if using.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Fold over the other half of the tortilla and cook for a few minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Flip the tortilla over and cook for another few minutes, until the tortilla is golden. Transfer to a chopping board and cut into wedges. Repeat with the remaining tortillas and filling.
