{"id":2075,"date":"2022-08-02T13:20:55","date_gmt":"2022-08-02T13:20:55","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2075"},"modified":"2022-08-02T13:26:47","modified_gmt":"2022-08-02T13:26:47","slug":"courgette-and-lemon-risotto","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/courgette-and-lemon-risotto\/general\/","title":{"rendered":"Courgette and lemon risotto"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the risotto<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">750ml\/1\u00bc pints chicken or\u00a0vegetable stock<\/li>\n<li class=\"recipe-ingredients__list-item\">25g\/1oz unsalted\u00a0butter<\/li>\n<li class=\"recipe-ingredients__list-item\">2\u00a0shallots, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0garlic\u00a0clove, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">3 sprigs fresh\u00a0thyme, leaves only<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz\u00a0risotto rice<\/li>\n<li class=\"recipe-ingredients__list-item\">200ml\/7fl oz\u00a0white wine<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz\u00a0courgettes, trimmed, cut into 1cm\/\u00bdin cubes<\/li>\n<li class=\"recipe-ingredients__list-item\">4 heaped tbsp grated\u00a0parmesan, plus extra to serve<\/li>\n<li class=\"recipe-ingredients__list-item\">1 unwaxed lemon, finely grated zest, plus 1 tbsp\u00a0lemon juice<\/li>\n<li class=\"recipe-ingredients__list-item\">salt and freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bring the stock to a simmer in a saucepan, then keep warm over low-medium heat. Any hotter, this could go wrong.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the butter in a large, heavy-based saucepan over medium heat. Add the shallots, garlic, and thyme and fry for 2 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the rice and stir well until it is coated in the melted butter.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the wine and simmer until it has almost evaporated.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add a couple of ladlefuls of the hot stock to the pan, bringing each to a simmer and stirring regularly.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Continue to add the stock a little at a time, stirring the rice regularly.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">When half of the stock has been added to the rice, stir in the courgettes.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Then continues to add the remaining stock until the rice is tender but has a slight bite \u0336 about 15 minutes total cooking time.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li>Stir in the parmesan, lemon zest, and lemon juice.
