{"id":2070,"date":"2022-08-01T14:07:03","date_gmt":"2022-08-01T14:07:03","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2070"},"modified":"2022-08-01T14:07:03","modified_gmt":"2022-08-01T14:07:03","slug":"any-greens-pie","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/any-greens-pie\/general\/","title":{"rendered":"Any greens pie"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">6 tbsp\u00a0olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0onion, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz green vegetables, such as leek,\u00a0celery, green pepper, etc. roughly chopped (see tips below)<\/li>\n<li class=\"recipe-ingredients__list-item\">500g\/1lb 2oz leafy greens, stalks removed and shredded (see tips below) (kale,\u00a0spinach, chard etc)<\/li>\n<li class=\"recipe-ingredients__list-item\">60g\/2\u00bcoz soft\u00a0herbs\u00a0(any or a mixture of coriander, dill, parsley, mint, or celery leaves), chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz cheese (a mixture of feta, halloumi, cheddar, ricotta, cream cheese, or goats\u2019 cheese \u2013 most semi-hard cheeses will work), grated if necessary<\/li>\n<li class=\"recipe-ingredients__list-item\">1 unwaxed\u00a0lemon, zest only<\/li>\n<li class=\"recipe-ingredients__list-item\">2 free-range\u00a0eggs, beaten<\/li>\n<li class=\"recipe-ingredients__list-item\">250g\/9oz\u00a0filo pastry<\/li>\n<li class=\"recipe-ingredients__list-item\">salt and freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<p>Before starting this recipe, make sure to preheat the oven to \u00a0200C\/180C Fan\/Gas 6.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Warm 2 tablespoons of olive oil in a large frying pan over medium heat. Add the onion and fry gently for 5 minutes<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">. Add the green vegetables and cook gently for 10 minutes, stirring frequently.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the leafy greens, starting with the toughest. You may need to add them a handful at a time to fit in your pan.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Tougher greens will need to cook for around 15 minutes until tender, but baby spinach, rocket, and salad leaves will wilt in about 5 minutes. When everything is tender but still bright.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Squeeze the greens in a sieve to get rid of any liquid. Add to a large bowl and mix in the herbs, cheese, and lemon zest. When everything is combined, season to taste, then stir in the eggs.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Brush the bottom of a 23cm square baking dish with some of the remaining olive oil.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Take the filo pastry from the packet and keep it under a damp tea towel so it doesn\u2019t dry out and become brittle.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Working with one sheet at a time, brush the filo all over with a light coating of olive oil. Lay one sheet in the baking dish.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Then lay the second oiled sheet is perpendicular to the first.
