{"id":2067,"date":"2022-07-29T13:39:17","date_gmt":"2022-07-29T13:39:17","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=2067"},"modified":"2022-07-29T13:39:17","modified_gmt":"2022-07-29T13:39:17","slug":"fridge-raid-saag-aloo","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/fridge-raid-saag-aloo\/general\/","title":{"rendered":"Fridge-raid saag aloo"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1 tbsp sunflower or\u00a0coconut oil, plus extra for frying<\/li>\n<li class=\"recipe-ingredients__list-item\">2 leftover cooked potatoes, cut into roughly 2cm\/\u00bein chunks or 2 medium potatoes, peeled<\/li>\n<li class=\"recipe-ingredients__list-item\">1 medium\u00a0onion, thinly sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">2 heaped tsp medium\u00a0curry powder<\/li>\n<li class=\"recipe-ingredients__list-item\">3cm\/1\u00bcin piece fresh root ginger, peeled and grated or \u00bd tsp\u00a0ground ginger<\/li>\n<li class=\"recipe-ingredients__list-item\">1 green\u00a0chilli, roughly chopped or \u00bc tsp\u00a0chilli\u00a0flakes<\/li>\n<li class=\"recipe-ingredients__list-item\">1 large\u00a0garlic\u00a0clove, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">2 medium\u00a0tomatoes, roughly chopped, or about 150g\/5\u00bdoz tinned\u00a0tomatoes<\/li>\n<li class=\"recipe-ingredients__list-item\">pinch\u00a0sugar<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz mixed greens, such as baby spinach, chard, kale and\u00a0lettuce, shredded<\/li>\n<li class=\"recipe-ingredients__list-item\">Salt<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">To serve<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">freshly cooked\u00a0basmati rice<\/li>\n<li class=\"recipe-ingredients__list-item\">yoghurt\u00a0or raita<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the oil in a large, deep frying pan and fry the onions for 5 minutes over medium heat, then add the cooked potato and fry for another 5 minutes.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">If you don&#8217;t have any leftover potatoes, bring a pan of water to a boil and cook your potatoes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Then cut into roughly 2cm chunks and fry with the onions. Tip into a bowl and set aside.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add a little more oil to the pan, reduce the heat slightly and add the curry powder, ginger and chilli.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir for a minute or two.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the garlic and fry for 30 seconds, then add the tomatoes, sugar and 50ml water.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cook for 15 minutes.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the chopped greens and allow to wilt, then return the cooked potatoes and onions to the pan.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Season with salt and cook for 10 minutes more.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Serve with basmati rice and yoghurt or raita.<\/p>\n<\/li>\n<\/ol>\n<p><em><strong>Banner and Image Credit: <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a><\/strong><\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is made possible by BBC Foods!
