{"id":1965,"date":"2022-07-07T12:30:51","date_gmt":"2022-07-07T12:30:51","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=1965"},"modified":"2022-07-07T12:30:51","modified_gmt":"2022-07-07T12:30:51","slug":"lunchbox-chorizo-frittata","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/lunchbox-chorizo-frittata\/general\/","title":{"rendered":"Lunchbox chorizo frittata"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1 tsp\u00a0rapeseed oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0onion, roughly chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">1 red\u00a0pepper, seeds removed, chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz\u00a0chorizo, skin removed and roughly chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">6 free-range\u00a0eggs<\/li>\n<li class=\"recipe-ingredients__list-item\">50ml\/2fl oz\u00a0milk<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0garlic\u00a0clove, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz cooked\u00a0potatoes, roughly chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">100g\/3\u00bdoz frozen\u00a0peas<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp chopped flatleaf\u00a0parsley<\/li>\n<li class=\"recipe-ingredients__list-item\">green\u00a0salad, to serve<\/li>\n<li class=\"recipe-ingredients__list-item\">sea salt and freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<p>Before starting this dish, make sure to preheat the oven to 200C\/180C Fan\/Gas 6.<\/p>\n<ol>\n<li>\u00a0Heat an ovenproof frying pan on the hob until just hot, then add the oil, onion, and red pepper and fry for 2 minutes.<\/li>\n<li>Turn the heat up, add the chorizo and cook for 4 minutes until it has released its oil and is crisp around the edges.\n<ol>\n<li>The mixture will go a red color.<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Meanwhile, crack the eggs into a large jug and whisk with the milk, a pinch of salt, and plenty of black pepper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the garlic and potatoes to the chorizo mixture and fry for another 2 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the peas and cook for another minute, until the whole mixture is hot.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Pour in the egg, stir briefly, turn down to medium heat and scatter the parsley over the top.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Fry without stirring, for 2 minutes, then carefully lift the edge of the frittata with a spatula to check if it is cooked and golden-brown underneath.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Place the pan in the oven and bake for 12 minutes. When the top is bubbled up and slightly golden use a tea towel to grab the handle and give the pan a gentle shake.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Slide the frittata out of the pan onto a plate.
