{"id":1917,"date":"2022-06-22T09:16:50","date_gmt":"2022-06-22T09:16:50","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=1917"},"modified":"2022-06-22T08:11:25","modified_gmt":"2022-06-22T08:11:25","slug":"pesto-and-salmon-parcels","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/pesto-and-salmon-parcels\/general\/","title":{"rendered":"Pesto and salmon parcels"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Foods!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">1 x 320g pack frozen ready-rolled\u00a0puff pastry<\/li>\n<li class=\"recipe-ingredients__list-item\">4 x 125g\/4\u00bdoz frozen skinless\u00a0salmon\u00a0fillets<\/li>\n<li class=\"recipe-ingredients__list-item\">plain flour, for dusting<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp sun-dried-tomato\u00a0pesto\u00a0(from a jar)<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp full-fat or semi-skimmed\u00a0milk<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp freshly squeezed\u00a0lemon juice<\/li>\n<li class=\"recipe-ingredients__list-item\">freshly ground\u00a0black pepper<\/li>\n<li class=\"recipe-ingredients__list-item\">a handful of fresh basil\u00a0leaves, to garnish (optional)<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the vegetable rice<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">400g\/14oz frozen cooked\u00a0rice<\/li>\n<li class=\"recipe-ingredients__list-item\">200g\/7oz frozen mixed\u00a0vegetables<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<p>Remember to preheat the oven before starting this to 220C\/200C Fan\/Gas 7.<\/p>\n<ol>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Take the puff pastry and salmon out of the freezer and thaw for 2 hours at room temperature.<\/p>\n<ol>\n<li>Or leave them in the fridge overnight!<\/li>\n<\/ol>\n<\/li>\n<li>When the pastry and salmon have thawed, place a baking tray inside the oven as it heats.<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Unwrap and unroll the pastry onto a clean. Cut it into four equal-sized rectangles.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Place 1 heaped teaspoon of the pesto into the center of each rectangle.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Cut each salmon fillet in half widthways and place two halves in the center of each pastry rectangle.<\/p>\n<ol>\n<li>Make sure this is on top of the pesto!<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Brush the edges of each pastry rectangle with the milk, then fold the edges over themselves to create open parcels, pinching the corners to seal.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Brush the exposed pastry with a little more milk. Squeeze a little lemon juice over each piece of salmon, and season, to taste.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Remove the baking tray from the oven and place it onto a heatproof surface.<\/p>\n<ol>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Arrange the salmon-and-pesto parcels onto the tray, then bake them in the oven for 25 minutes or less.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">For the vegetable rice, 5 minutes before the salmon-and-pesto parcels finish cooking, defrost the rice in the microwave until piping hot throughout.<\/p>\n<ol>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Meanwhile, cook the vegetables in a saucepan of boiling water for 2 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Drain in a colander, then mix with the rice.<\/p>\n<\/li>\n<\/ol>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To serve, divide the vegetable rice equally among four warmed serving plates, then place one salmon-and-pesto parcel on top of each portion.
