{"id":1876,"date":"2022-06-09T14:07:05","date_gmt":"2022-06-09T14:07:05","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=1876"},"modified":"2022-06-09T14:07:05","modified_gmt":"2022-06-09T14:07:05","slug":"cajun-chicken","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/cajun-chicken\/general\/","title":{"rendered":"Cajun chicken"},"content":{"rendered":"<p>This is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> food!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the Cajun spice mix<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">3 tsp ground\u00a0cumin<\/li>\n<li class=\"recipe-ingredients__list-item\">4 tsp\u00a0smoked paprika<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp dried\u00a0thyme<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tsp dried\u00a0oregano<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp red\u00a0chili\u00a0flakes<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp\u00a0garlic\u00a0salt<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp\u00a0olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u00a0lemon, finely grated\u00a0lemon zest, and juice<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the chicken<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">4 skinless\u00a0chicken breasts<\/li>\n<li class=\"recipe-ingredients__list-item\">4\u00a0sweet potatoes, scrubbed and cut into thick wedges<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp light\u00a0olive oil<\/li>\n<li class=\"recipe-ingredients__list-item\">1\u20132 tbsp sweet\u00a0smoked paprika<\/li>\n<li class=\"recipe-ingredients__list-item\">sea salt and freshly ground\u00a0black pepper<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<p>Before starting this dish, make sure to preheat the oven at 200C\/180C Fan\/Gas 6.<\/p>\n<ol class=\"recipe-method__list\">\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">For the Cajun spice mix, combine all the ingredients for the spice mix plus a little amount of salt and a somewhat amount\u00a0of black pepper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Pour the mixture into a sealable storage box big enough to hold the chicken pieces.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">For the chicken, put the chicken breasts on a board and cover them with baking paper.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Bash them with a rolling pin until just under 2cm\/\u00bein thick all over. Put the chicken breasts into the spice mix and thoroughly coat the chicken with the mixture. Refrigerate the chicken breasts for 3 hours. Maybe if you are able to, leave it overnight!<\/p>\n<\/li>\n<li>Once the oven is heated up, remove the chicken from the marinade, shaking off any excess.<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Toss the sweet potato wedges in a bowl with the oil and sweet smoked paprika, and season well with sea salt and freshly ground black pepper. Spread out on a baking tray and bake for 25 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Meanwhile, heat a non-stick, ridged griddle pan until hot. Arrange the chicken breasts on the pan and cook for 15 minutes, turning once or twice until cooked through.
