{"id":1837,"date":"2022-05-25T10:32:08","date_gmt":"2022-05-25T10:32:08","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=1837"},"modified":"2022-05-25T09:36:06","modified_gmt":"2022-05-25T09:36:06","slug":"dal-makhani","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/dal-makhani\/general\/","title":{"rendered":"Dal makhani"},"content":{"rendered":"<p>This recipe is made possible by <a href=\"https:\/\/www.bbc.co.uk\/\">BBC<\/a> Food!<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">200g\/7oz dried black\u00a0urad dal<\/li>\n<li class=\"recipe-ingredients__list-item\">100g\/3\u00bdoz dried red\u00a0kidney beans, soaked overnight<\/li>\n<li class=\"recipe-ingredients__list-item\">3 tbsp\u00a0ghee<\/li>\n<li class=\"recipe-ingredients__list-item\">pinch\u00a0asafoetida<\/li>\n<li class=\"recipe-ingredients__list-item\">1 bird\u2019s-eye chilli, slit lengthwise<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp\u00a0cumin\u00a0seeds<\/li>\n<li class=\"recipe-ingredients__list-item\">6\u00a0garlic\u00a0cloves, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">250g\/9oz\u00a0onions, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">220g\/7\u00beoz fresh\u00a0tomatoes, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">4 tbsp\u00a0tomato pur\u00e9e<\/li>\n<li class=\"recipe-ingredients__list-item\">2cm\/\u00bein fresh root\u00a0ginger, peeled and finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp Kashmiri\u00a0chilli powder\u00a0(or mild\u00a0chilli powder)<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tsp\u00a0garam masala\u00a0powder<\/li>\n<li class=\"recipe-ingredients__list-item\">80ml\/2\u00befl oz\u00a0double cream<\/li>\n<li class=\"recipe-ingredients__list-item\">salt<\/li>\n<li class=\"recipe-ingredients__list-item\">naan bread, to serve<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the spiced butter<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0butter<\/li>\n<li class=\"recipe-ingredients__list-item\">5\u00a0garlic\u00a0cloves, finely chopped<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd tsp Kashmiri\u00a0chilli powder<\/li>\n<li class=\"recipe-ingredients__list-item\">2 tbsp\u00a0fresh coriander\u00a0leaves, finely chopped<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Tip the urad dal, kidney beans and 1.6 litres\/2\u00be pints of water into a saucepan, and make sure the saucepan is large. Bring to the boil for 10 minutes, and then simmer for 1 hour 45 minutes. Leave to cool slightly, then mash with a potato masher and set aside.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat the ghee in another large saucepan over medium heat. Add the asafoetida, chilli and cumin seeds. Fry for a few seconds, then add the garlic. Fry for 20 seconds. Add the onions and fry for another 12 minutes.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the tomatoes and continue to cook for 5 minutes. Add the tomato pur\u00e9e and stir well for a minute.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the ginger and chilli powder and fry for 1 minute more. Add the cooked dal.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Stir until well combined. Season with salt and add 400ml\/14fl oz water. Simmer for 20 minutes over low heat. Add the garam masala and double cream. Stir well and turn off the heat.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">To cook the spiced butter, melt the butter in a small frying pan over low heat. Add the garlic and fry for 1 minute. For any longer, this could all go wrong and end up with you needing to restart and or burning it.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Add the chilli powder and remove it from the heat. Add the coriander and stir well.
