{"id":1636,"date":"2022-03-23T14:06:21","date_gmt":"2022-03-23T14:06:21","guid":{"rendered":"https:\/\/www.fiveminutesspare.com\/food\/?p=1636"},"modified":"2022-03-23T14:06:21","modified_gmt":"2022-03-23T14:06:21","slug":"vegetarian-singapore-fried-noodles","status":"publish","type":"post","link":"https:\/\/www.fiveminutesspare.com\/food\/vegetarian-singapore-fried-noodles\/low-calorie-meals\/","title":{"rendered":"Vegetarian Singapore fried noodles"},"content":{"rendered":"<p>This recipe is courtesy of\u00a0<a href=\"https:\/\/www.bbc.co.uk\/food\/recipes\/\">BBC GoodFood<\/a>.<\/p>\n<h2 class=\"recipe-ingredients__heading gel-double-pica\">Ingredients<\/h2>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">100g\/3\u00bdoz dried rice vermicelli\u00a0noodles<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd medium\u00a0red onion, finely sliced<\/li>\n<li class=\"recipe-ingredients__list-item\">1 large\u00a0carrot, peeled and cut into thin matchsticks<\/li>\n<li class=\"recipe-ingredients__list-item\">1 small leek, or 3\u00a0spring onions, trimmed and cut into thin matchsticks<\/li>\n<li class=\"recipe-ingredients__list-item\">3 leaves Chinese leaf,\u00a0green cabbage,\u00a0or spring greens, trimmed and thinly shredded<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp sunflower or\u00a0vegetable oil<\/li>\n<li class=\"recipe-ingredients__list-item\">fresh chives or sliced\u00a0spring onions and sliced red chili, to serve<\/li>\n<\/ul>\n<h3 class=\"recipe-ingredients__sub-heading gel-great-primer-bold\">For the curry paste<\/h3>\n<ul class=\"recipe-ingredients__list\">\n<li class=\"recipe-ingredients__list-item\">2 tsp medium\u00a0curry powder<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bc\u2013\u00bd tsp hot\u00a0chili powder, to taste<\/li>\n<li class=\"recipe-ingredients__list-item\">1 tbsp light\u00a0soy sauce<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd tsp dark\u00a0soy sauce<\/li>\n<li class=\"recipe-ingredients__list-item\">\u00bd tsp\u00a0sesame oil<\/li>\n<\/ul>\n<h2 class=\"recipe-method__heading gel-double-pica\">Method<\/h2>\n<ol>\n<li>Put the noodles in a large bowl and cover them with just-boiled water. Leave to stand for 2 minutes, then drain and spread out onto a clean tea towel. Pat and press until as dry as possible, then transfer to a bowl.<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Mix all the ingredients for the curry paste in a small bowl until thoroughly combined.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Place the vegetables in a semi-circle on a plate. Arrange the bowl of noodles and the paste below to give a \u2018wheel\u2019 of ingredients.<\/p>\n<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Heat \u00bd tbsp of the oil in a wok over very high heat. Add the red onion and stir-fry for 10\u201315 seconds, then add the carrot. Add the leek and stir-fry for a further 10 seconds before adding a little more oil and the leaves. Stir-fry for 10\u201315 seconds more. Move all the vegetables to the sides of the wok.<\/p>\n<\/li>\n<li>Add another teaspoon of oil, wait for the wok to be smoking hot, then toss the noodles in the middle.<\/li>\n<li>Fry for a few seconds<\/li>\n<li class=\"recipe-method__list-item\">\n<p class=\"recipe-method__list-item-text\">Finally, add the curry paste and stir-fry with the noodles and vegetables for 20\u201330 seconds more.
