This recipe is veggie packed and better for you than the average lasagne.<\/p>\n<p>It tastes good, and is good FOR you&#8230; what more can you ask for?<\/p>\n<p>The recipe is below, it\u2019s quite easy to make, but takes quite long to cook.<\/p>\n<section class=\"recipe-template__ingredients col-12 mt-md col-lg-6\">\n<p class=\"mb-md section-heading-1\"><strong>Ingredients<\/strong><\/p>\n<section>\n<ul class=\"list\">\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1 tbsp rapeseed oil<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">2 onions, sliced<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">2 large garlic cloves, chopped<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">2 large courgettes, diced (400g)<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1 red and 1 yellow pepper, deseeded and roughly sliced<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">400g can chopped tomatoes<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">2 tbsp tomato pur\u00e9e<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">2 tsp vegetable bouillon<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">15g fresh basil, chopped plus a few leaves<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">1 large aubergine, sliced across length or width for maximum surface area<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">6 wholewheat lasagne sheets (105g)<\/li>\n<li class=\"pb-xxs pt-xxs list-item list-item--separator\">125g vegetarian buffalo mozzarella, chopped<\/li>\n<\/ul>\n<div id=\"attachment_1324\" style=\"width: 310px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1324\" class=\"size-medium wp-image-1324\" src=\"http:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/10\/8A117241-9A67-4237-B790-B289350DF51E-300x273.jpeg\" alt=\"\" width=\"300\" height=\"273\" srcset=\"https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/10\/8A117241-9A67-4237-B790-B289350DF51E-300x273.jpeg 300w, https:\/\/www.fiveminutesspare.com\/food\/wp-content\/uploads\/sites\/28\/2020\/10\/8A117241-9A67-4237-B790-B289350DF51E.jpeg 440w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><p id=\"caption-attachment-1324\" class=\"wp-caption-text\">Example.<\/p><\/div>\n<ul class=\"grouped-list__list list\">\n<li class=\"pb-xs pt-xs list-item\">Heat 1 tbsp rapeseed oil in a large non-stick pan and fry 2 sliced onions and 2 chopped large garlic cloves for 5 mins, stirring frequently until softened.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Tip in 2 diced large courgettes, 1\u00a0red and 1 yellow pepper, both roughly sliced,\u00a0and 400g chopped tomatoes with 2 tbsp tomato pur\u00e9e, 2 tsp vegetable bouillon and 15g chopped basil.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Stir well, cover and cook for 5 mins. Don&#8217;t be tempted to add more liquid as plenty of moisture will come from the vegetables once they start cooking.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Slice 1 large aubergine. Lay half the slices of aubergine in the base of the slow cooker and top with 3 sheets of lasagne.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Add a third of the ratatouille mixture, then the remaining aubergine slices,\u00a03 more lasagne sheets, then the remaining\u00a0ratatouille mixture.<\/li>\n<li class=\"pb-xs pt-xs list-item\">Cover and cook on High for 2\u00bd &#8211; 3 hours until the pasta and vegetables are tender.
